1 small onion, chopped
2 cloves garlic, chopped
½ cup chopped fresh spinach
4 eggs, beaten
2 tomatoes, seeded and chopped
salt and pepper to taste
ground cayenne pepper to taste
1 dash hot pepper sauce
¼ cup shredded Cheddar cheese

Steps:

  • Bring a small pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • Saute the onion and garlic in a lightly oiled skillet over medium high heat. When onion is soft, stir in the spinach and cook until wilted, about 2 minutes.

3/4 cup heavy cream
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine, melted
1 cup onion, chopped
1 cup red bell pepper, chopped
1 cup mushroom, sliced
1 (4 ounce) can green chilies, diced
6 slices bacon, cooked & crumbled (optional)
3/4 cup cheddar cheese, shredded
3/4 cup monterey jack cheese, shredded

Steps:

  • Combine eggs, cream and salt in medium bowl.
  • Melt butter in a large skillet; cook onion, bell pepper and mushrooms until tender.
  • Add the chiles, bacon (if using), and egg mixture. Cook, stirring occasionally until eggs begin to set. Sprinkle cheddar cheese and Monterey Jack cheese over eggs. Cover, and continue to cook until eggs are set and fully cooked.
