As long as I can remember, my favorite room's been the kitchen. My glaze dates back to shortly after my husband (of 23 years now) and I were married. My parents were visiting, I cooked a Sunday ham with this glaze-and I've done it that same way from then on. Since my husband made his career in the Air Force, we spent years in the city or living in close quarters. When he retired, we decided to plant roots here where we could experience the daily wonder of God's creation. (The rise and set of the sun, silhouetting the mountains in the distance, is breathtaking.) Our children are 17 and 11.

1 bone-in fully cooked ham (5 to 8 pounds)
1-1/2 cups orange juice
1-1/4 cups packed brown sugar
1 tablespoon grated orange zest
1 teaspoon ground mustard
1/4 teaspoon ground cloves

Steps:

  • Score surface of ham, making diamond shapes 1/2 in. deep. Place in a large baking dish. , In a bowl, mix remaining ingredients; pour over ham. Cover and refrigerate overnight, turning ham occasionally. , Reserving glaze, remove ham to a rack in a shallow roasting pan. Insert thermometer. Bake, uncovered, at 325° until thermometer registers 140° about 2-4 hours, brushing occasionally with glaze.

1 9-10 pound smoked, fully cooked ham
whole cloves
1/2 c triple sec
1 1/2 c brown sugar, firmly packed
1 c cranberry juice cocktail
1/2 c honey
1/3 c triple sec
3 1/2 Tbsp prepared mustard
3 Tbsp butter
2 Tbsp apple cider vinegar
1 1/2 Tbsp all-purpose flour
2 oranges, peeled and sliced
maraschino cherries, halved

Steps:

  • 1. Slice the skin from the ham. Score the fat on the ham in a diamond design and stud with cloves.
  • 2. Inject 1/2 cup liqueur into ham, at 3-inch intervals.
  • 3. Combine the brown sugar and the next 7 ingredients in a medium saucepan; stir well. Bring to a boil; reduce heat, and simmer for 2 minutes. Set the glaze aside.
  • 4. Place the ham, fat side up, on a rack in a shallow roasting pan; pour the brown sugar mixture over the ham.
  • 5. Insert a meat thermometer, making sure it does not touch fat or bone.
  • 6. Cover and bake at 325 degrees for 2 1/2 hours, basting frequently with glaze.
  • 7. Arrange the orange slices over the exposed portion of the ham; secure with wooden picks. Place a cherry half in the center of each orange slice.
  • 8. Bake, uncovered, an additional 30 minutes or until thermometer registers 140 degrees.

1-2 lb ham steak, trimmed of fat
1 c diet cranberry juice
1/2 pkg 12 oz of fresh cranberries
1 apple,chopped fine
1/8 c splenda blend sugar
1 capfull real lemon juice
1/2 medium onion,sliced thin
peppermint sticks
green onions[dried]

Steps:

  • 1. spray med size fry pan with non stick cooking spray...heat over med high heat add onion... cook and stir 3-5 min til getting limp...add cranberries, the juices, and apple.....cook and stir cranberries will start popping ...... after most have popped add splenda......cook 10 min more til it thickens up..... preheat oven to 350
  • 2. spray a cookie sheet with nonstick spray.......spoon 1/2 cranberries on sheet... cut ham into serving size pieces[i got 4 out of 1 1/2 pd steak] now put reast of cranberries on top each piece of ham cover with foil... bake 25 miutes... remove from oven turn each piece of ham spoon cranberries on top place peppermint stick on top ham put back in oven for another 2o minutes to serve place ham steakes on servin platter scoop all cranberries over them sprinkle green onions over all..........
