Yield Makes 8 servings

Number Of Ingredients 11

2 tablespoons chopped garlic (4 to 5 cloves)
1 tablespoon kosher salt
1 tablespoon chopped fresh thyme
2 teaspoons fennel seeds
1 teaspoon black peppercorns
1 6 pound bone-in pork loin roast
1 cup dry white wine
1 cup water
2 tablespoons cold unsalted butter, cut into pieces
Special Equipment
a coffee/spice grinder; an instant read thermometer

Steps:

  • Prepare the rub:
  • Mince and mash garlic, salt, and thyme to make a paste with a large heavy knife and transfer to a small bowl.
  • Grind fennel seeds and peppercorns in spice grinder until finely ground and stir into garlic paste.
  • Rub paste all over meat and fat side of roast, pressing to adhere. Place, fat side up, in a small roasting pan or a (13- by 9-inch) baking pan and marinate in the fridge, loosely covered, for at least to 2 and up to 6 hours. Let stand at room temperature 1 hour before roasting.
  • Roast the pork loin:
  • Preheat oven to 350°F.
  • Put roast in a small roasting pan fat side up (if it isn't in roasting pan already) and pour wine and water into bottom of pan.
  • Roast pork in middle of oven (or lower third if making whole menu) until an instant read thermometer inserted into center of meat (do not touch bone) registers 140°F, about 1 1/2 to 1 3/4 hours.
  • Remove roast from oven and let rest, loosely covered with foil, in roasting pan 25 to 30 minutes (internal temperature will go up 10 degrees while meat is resting).
  • Transfer the roast to a cutting board, and using a long knife, cut meat from bone in one piece. Slice into 1/2-inch thick slices, keeping slices together.
  • Transfer the bones to a large serving platter and arrange meat on the bone.
  • Heat juices in roasting pan until bubbling, then add butter and whisk into pan until incorporated.
  • Serve sauce alongside meat.

FENNEL SPICE RUB

Fennel Spice Rub image

This is my favorite spice mixture. There is almost nothing it doesn't taste good on or in. Use it to make spice-encrusted pork ribs, chops or tenderloin; veal chops; chicken breasts; duck; beef; liver; or eggplant; or add a teaspoon to lentil soup. If you don't have time to make it, we do it for you, with our Fennel Spice Rub.

Time 10m

Yield 1 1/4 cups

Number Of Ingredients 4

1 cup fennel seeds
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons kosher salt

Steps:

  • Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades.
  • Pour the seeds into a blender and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze.

FENNEL SEED SPIKED PORK ROAST

Fennel Seed Spiked Pork Roast image

I have often served a fennel salad with a pork chop, and decided: let's kick it up a notch. Thus the birth of this dish. Roast for 40 minutes per pound.

Time 5h20m

Yield 24

Number Of Ingredients 11

2 tablespoons fennel seed
2 teaspoons dried rosemary
1 teaspoon dried thyme leaves
1 teaspoon whole black peppercorns
1 tablespoon coarse sea salt
5 tablespoons minced garlic
2 tablespoons ouzo
1 (8 pound) fresh Boston butt pork roast
2 large onions, thickly sliced
1 fennel bulb, sliced thickly
water as needed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Toast the fennel seed, rosemary, thyme, and peppercorns in a heavy pan over medium-low heat until strongly fragrant and the fennel seeds are lightly browned, 1 to 3 minutes. Do not let the spices burn! Place the toasted spices, sea salt, garlic, and ouzo into a mortar and pestle or spice grinder, and grind to a paste. Score the fat layer of the pork roast with a sharp knife; rub the spice paste all over the roast.
  • Spread the sliced onions and fennel into the bottom of a large roasting pan; pour enough water into the pan to just cover the vegetables. Place the roast on top of the onions and fennel with the fat layer facing upward.
  • Roast in the preheated oven until the pork is tender, 5 to 6 hours (or about 40 minutes per pound). An instant-read thermometer inserted into the center should read 185 degrees F (85 degrees C). Add extra water if needed during roasting to prevent the onions and fennel from burning.

Yield Makes 6 servings

Number Of Ingredients 14

3 large fresh fennel bulbs, trimmed, each cut into 8 wedges
2 tablespoons plus 1/4 cup extra-virgin olive oil
10 garlic cloves, peeled
2 tablespoons fennel seeds, coarsely crushed in resealable plastic bag
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh marjoram
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 3-pound whole chickens
2 lemons, halved
1 cup Vernaccia di San Gimignano wine or other dry white wine
1/3 cup low-salt chicken broth

Steps:

  • Cook fennel in large pot of boiling salted water until tender when pierced with knife, about 8 minutes. Drain. Transfer to bowl. Mix in 2 tablespoons oil; garlic; 1 tablespoon each fennel seeds, thyme, rosemary, tarragon, and marjoram; then 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • Preheat oven to 450°F. Mix remaining 1 tablespoon each fennel seeds and herbs in small bowl. Rinse chickens inside and out; pat dry. Rub chickens inside and out with lemon halves, squeezing some of juice into cavities. Rub outside of chickens with 1/4 cup oil, then fennel seed mixture. Sprinkle chickens generously with salt and pepper. Loosely stuff chickens with some of fresh fennel mixture. Tie legs together. Place chickens, breast side down, in large roasting pan. Arrange remaining fresh fennel mixture around chickens.
  • Roast chickens 30 minutes, basting occasionally with pan juices. Combine wine and broth and pour over chickens. Roast 15 minutes. Turn chickens breast side up. Roast chickens until juices run clear when pierced with fork in thickest part of thigh, about 40 minutes longer. Transfer chickens and fennel mixture to platter. Pour pan juices into bowl; skim off fat. Pour juices over chickens and serve.

Tips:

  • Choose fresh fennel seeds: Fresh fennel seeds have a more intense flavor than ground fennel seeds. If you can, buy whole fennel seeds and grind them yourself just before using.
  • Toast the fennel seeds: Toasting the fennel seeds brings out their flavor and makes them more aromatic. You can toast them in a dry skillet over medium heat for a few minutes, or you can roast them in the oven at 350 degrees Fahrenheit for 10-15 minutes.
  • Use a mortar and pestle: A mortar and pestle is the best way to grind the fennel seeds and thyme. This will give you a more consistent grind and release the oils in the herbs.
  • Don't overwork the rub: The rub should be mixed together until the ingredients are evenly distributed, but you don't want to overwork it. Overworking the rub will make it tough and dry.
  • Let the rub rest: After you've mixed the rub together, let it rest for at least 30 minutes before using it. This will allow the flavors to meld together and develop.
  • Apply the rub generously: When you're ready to use the rub, apply it liberally to the meat. You want to make sure that the meat is evenly coated with the rub.
  • Cook the meat according to your desired doneness: The cooking time for the meat will depend on the type of meat you're using and your desired doneness. Cook the meat according to your preferred method and temperature.

Conclusion:

This fennel seed, thyme, and garlic rub is a versatile and flavorful rub that can be used on a variety of meats. The rub is easy to make and can be used to add a delicious flavor to your favorite dishes. Whether you're grilling, roasting, or braising meat, this rub will add a delicious flavor that your family and friends will love.
