These mini hamburgers taste very similar to the popular mini fast food burgers! We make them every year for the Big Game, but they are great any time. They can be made ahead and frozen until needed.

1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon mayonnaise
1 (1 ounce) package dry onion soup mix
24 (2 inch square) dinner rolls, split

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, thoroughly mix ground beef chuck, Cheddar cheese, mayonnaise and dry onion soup mix.
  • Spread even amounts of the ground beef onto the bottom half of each roll. Place top halves on, forming little sandwiches. If you purchased the rolls in aluminum foil pans, you may return them to the same pan for baking. Otherwise, place them on a baking sheet or baking pan. Cover the pan tightly with aluminum foil.
  • Bake for 30 to 35 minutes in the preheated oven, or until meat is cooked through.

2 slices thick-cut bacon
9 ounces ground beef
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 to 3 splashes Worcestershire sauce
1 clove garlic, pressed
3 slices Cheddar, quartered
1/4 cup baby spinach leaves
12 dill pickle chips
2 tablespoons your favorite burger condiment
3 cherry tomatoes, halved

Steps:

  • Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
  • Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
  • Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
  • Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

1 tablespoon prepared mustard
1-1/2 teaspoons Worcestershire sauce
1 tube (12 ounces) refrigerated buttermilk biscuits
1/2 cup cubed Velveeta

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. 30 frozen dinner roll dough (thawed but, still cold)
1 1/4 lb lean ground beef
1 medium onion (finely diced)
olive oil
1 Tbsp hamburger or steak seasoning ((a mixture of garlic, onion. pepper and salt))
1/2 tsp salt
1 Tbsp Worcestershire sauce
1 1/2 cups shredded sharp cheddar cheese
2 oz chive and onion cream cheese (softened)
1/3 cup chopped dill pickles
1/3 cup ketchup
3 Tbsp yellow mustard
1 large egg (beaten with 1 tsp cold water)
sesame seeds

Steps:

  • Arrange frozen dinner rolls on a wax paper lined baking sheet without touching. Cover loosely with plastic wrap. Let sit for 1 hour or just until thawed but, still cold.
  • Meanwhile, In a large 12 inch skillet, cook ground beef and onion in a couple of drizzles of olive oil over medium high heat. Cook until no pink remains. Drain excess fat from pan.
  • To the beef add steak seasoning, salt and worcestershire sauce. Mix well, cook for 1 minute. Taste and adjust seasoning amounts to taste. Remove from heat and cool completely. (This can be done in advance for a timesaver.)
  • To assemble: Preheat oven to 375°F. Line a large baking sheet with parchment paper. Set aside.
  • To the cooked ground beef add, cheddar cheese, cream cheese, pickles, ketchup and mustard, Mix until fully combined.
  • Flatten each dough round into roughly a 2 1/2 -3 inch circle. Place 1 Tbsp filling in the center. Tightly pinch dough up around filling to seal. Place seam side down on a baking sheet 2 inches apart.
  • Whisk egg with water then brush tops and sides of dough, sprinkling tops with sesame seeds.
  • Bake for 20-22 minutes until golden.
  • Serve immediately with special burger sauce for dipping.

Keep it in the refrigerator until you are ready to cook, and then when you do, form your patties gently. Season after the meat is in the pan.

1/2 teaspoon neutral oil, like canola, or a pat of unsalted butter
2 pounds ground chuck, at least 20 percent fat
Kosher salt and black pepper to taste
4 slices cheese (optional)
4 soft hamburger buns
Lettuce leaves, sliced tomatoes and condiments, as desired

Steps:

  • Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 4 small piles of around 8 ounces each, and then lightly form these into thick patties of around 3 1/2 inches in diameter, like flattened meatballs. Season aggressively with salt and pepper.
  • Increase heat under skillet to high. Put hamburgers into the skillet with plenty of distance between them and allow them to cook, without moving, for approximately 3 minutes. Use a spatula to turn hamburgers over. If using cheese, lay slices on meat.
  • Continue to cook until meat is cooked through, approximately another 3 to 4 minutes for medium-rare. Remove hamburgers from skillet and allow to rest for approximately 5 minutes; meanwhile, toast the buns. Place hamburgers on buns and top as desired.

1 large egg yolk, beaten
1/2 pound lean ground beef
2 tablespoons grated onion
1/2 teaspoon salt
Dash pepper
6 slices bread
24 cubes cheddar cheese (1/2-inch cubes)

Steps:

  • In a bowl, combine egg yolk, ground beef, onion, salt and pepper. Shape mixture by teaspoonfuls into 24 balls. Remove crusts from bread; roll flat and cut into 1-1/2-in. rounds. Place meatballs on bread rounds; make a depression in each ball and fill with a cube of cheese, making sure bread is covered with meat mixture. , Place on a baking sheet.
