1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup chopped sweet red pepper
2 tablespoons butter
1/4 cup all-purpose flour
1 envelope ranch salad dressing mix
4-1/4 cups whole milk
2 cups frozen cubed hash brown potatoes, thawed
2 cups frozen corn, thawed
2 cups cubed fully cooked ham
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/2 cup shredded smoked Gouda cheese

Steps:

  • In a large saucepan, saute the onion, celery and red pepper in butter until crisp-tender. Stir in flour and dressing mix until blended; gradually stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. , Add the potatoes, corn, ham and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes to allow flavors to blend. Stir in cheese until blended.

1/2 cup onion, chopped
1/2 cup celery, chopped
1/2 cup sweet red pepper, chopped
2 tablespoons butter
1/4 cup flour
1 (1 ounce) envelope ranch dressing mix
4 1/4 cups milk
2 cups frozen sweet corn
2 cups frozen cubed hash brown potatoes, thawed
2 cups cooked ham, cubed
1/4 teaspoon thyme
1/4 teaspoon salt
1/4-1/2 teaspoon garlic powder
1 dash pepper
2 ounces gouda cheese

Steps:

  • In a large pan, saute the onion, celery and pepper in the butter until the veggies are crisp-tender.
  • Stir in flour and ranch dressing mix until smooth. Gradually stir in milk.
  • Bring to a boil. Cook and stir for 2 minutes or until thickened.
  • Add the corn, potatoes, ham and spices. Bring to a boil.
  • Reduce heat and simmer uncovered for 8-10 minutes, or until heated through.

2 (10 3/4 ounce) cans condensed cream of celery soup
2 cups diced cooked ham
1 (10 ounce) package frozen corn, thawed
1 large baking potato, cut into 1/2 inch pieces
1 medium red bell pepper, diced
1/2 teaspoon dried thyme
2 cups small broccoli florets
1/2 cup milk

Steps:

  • Combine soup, ham, corn, potato, bell pepper and thyme in slow-cooker; mix well.
  • Cover; cook on LOW 6-8 Hours or on HIGH 3-4 hours.
  • Stir in broccoli and milk. Cover; cook on HIGH 15 minutes or until broccoli is crisp-tender.
  • Note: I added the milk early and bumped up the amount of milk to 1 Cup.
