1 large egg, beaten
1/2 cup sour cream
1/3 cup salsa
2 to 4 tablespoons taco seasoning
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese
2 pounds lean ground beef (90% lean)
Optional toppings: sour cream, salsa, shredded cheddar cheese, shredded lettuce, sliced ripe olives

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Pat into a 3-qt. slow cooker. , Cover and cook on low for 8 hours or until no pink remains and a thermometer reads 160°. Top with sour cream, salsa, cheese, lettuce and olives if desired.

1 can (6 ounces) tomato paste, divided
2 tablespoons Dijon mustard
2 teaspoons prepared horseradish, divided
1/2 cup quick-cooking oats
1 envelope onion soup mix
1-1/2 teaspoons garlic powder
1 teaspoon steak seasoning
1 pound lean ground beef
1/2 pound lean ground turkey
1 teaspoon water
1/2 teaspoon sugar

Steps:

  • In a large bowl, combine the egg substitute, 1/2 cup tomato paste, mustard, 1 teaspoon horseradish, oats, soup mix, garlic powder and steak seasoning.
