I got this banana bread recipe from the Family Circle magazine in 1988, and have baked it 3-4 times a year since then. I get requests for this from my co-workers every Christmas. Makes a great gift!

Number Of Ingredients 11

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
3 medium bananas, mashed
1/2 cup milk
1 cup chopped pecans or 1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, grease& flour 9x5x3 inch loaf pan.
  • Combine flour, baking soda, baking powder& salt in medium size bowl.
  • Beat together butter and sugar until light colored, then beat in eggs, one at a time.
  • Stir in vanilla, then stir in flour mixture, a little at a time with the banana& milk.
  • Add 2/3 cup nuts, and pour batter into pan.
  • Sprinkle remaining nuts on top.
  • Bake for 1 hour& 20 minutes or until done (when a toothpick inserted in center comes out clean).
  • Cool bread in pan on wire rack for 10 minutes.
  • Loosen around the edges and cool completely on rack.
  • Wrap tightly& store at room temperature.
  • TIP: Make sure the bananas are ripe, or the bread will be dry& crumbly.
  • The riper the bananas, the moister the bread.
  • Bread is better the next day.
  • Freezes well- up to 6 months.

This bread is loved by all who's tried it, especially my kids. I've handed out so many copies of this recipe over the years. It certainly doesn't last long. I made 3 mini loaves and my son already has the first one demolished...LOL! He wouldn't wait until it cooled for me to frost, as you can see in the pictures. :) If you love the combo of peanut butter and banana's, you will love this bread. 1 cup(s) peanut butter
1/4 cup(s) brown sugar
1 - egg
1/2 cup(s) sour cream
1 teaspoon(s) vanilla
1 1/2 cup(s) mashed ripe bananas
1 1/2 cup(s) flour
1/4 teaspoon(s) salt
1 teaspoon(s) baking soda
1/2 cup(s) peanut butter chips
PEANUT BUTTER GLAZE
1/4 cup(s) cream or milk
1/2 cup(s) confectioners' sugar
3 tablespoon(s) slightly heaping - peanut butter
1/2 teaspoon(s) vanilla

Steps:

  • Preheat oven to 350 degree F. Spray a 9 x 5 loaf pan with non stick cooking spray. I use bakers joy. In a large bowl, beat the peanut butter with the brown sugar until light and fluffy or until sugar is well incorporated. In another bowl, sift the flour, soda and salt. Set aside.
  • Once the sugar and peanut butter is creamed, beat in the banana, egg, sour cream and vanilla. Mix well. To this add the flour mixture and only beat until blended. Fold in the peanut butter chips.
  • Spread into prepared loaf pan. Bake for 55 minutes to 1 hour, or until pick comes out clean. If it starts getting too brown, cover with foil and return to oven.
  • In a small bowl, whisk all glaze ingredients until creamy. Add more sugar or milk to get desired consistency. Remove bread from oven and place on cooling rack for 5 minutes, then remove from pans. Once cool, glaze.
  • Enjoy with a cup of coffee or a nice glass of ice cold milk.
