This is a very delicious ice cream float. It is like an ice cream sundae from Pakistan. The basil seeds make it very uncommon. My kids call them fish eyeballs. Use recipe 177928 for kulfi.

30 ounces kulfi ice cream (Super Easy Kulfi (Pakistani Ice Cream), or 6 popsicles)
1 1/2 cups milk
3 tablespoons basil seeds (called takmaria in indian or pakistani stores, soak before making dessert)
9 tablespoons rose syrup (called RoohAfza in indo or pak store)
3 ounces falooda noodles (you can also use rice noodles in asian stores, boil and cool ahead)

Steps:

  • Soak basil seed for 2 hours and drain water. They will swell and look like little eyeballs.
  • Boil noodles and drain and cool.
  • Make in 3 individual glasses.
  • You will be dividing all ingredients between 3 glasses.
  • Add noodles.
  • Add kulfi cut in small pieces.
  • Add Basil seeds.
  • Add Rose syrup.
  • Add milk.

A traditional Indian/Pakistani desert drink. My version uses ingredients you can easily find at your local Indian and Chinese Grocery store. This recipe is super easy and tastes BETTER than what you can find at most Indian restaurants!! The Falooda Seeds are optional since they don't really have a flavor, but they do add to the authentic look (a little like floating tadpoles!), and are actually very good for digestion in a hot climate.

1 glass milk (skim to full)
1 -2 ounce chinese noodles (or 1-2 falooda sev)
1 1/2 teaspoons rose water (or rooafzah)
1/2 teaspoon falooda seeds (or takmaria seeds) (optional)
pista, kulfi (Indian Store, $5 for a quart) or plain kulfi ice cream (Indian Store, $5 for a quart)

Steps:

  • Soak the Takmaria Seeds in water for at least 1 hour.
  • Boil the noodles/sev in water for about 15 minutes.
  • Drain the water, and boil the noodles in a little milk for about 5-10 minutes on low heat. Do not burn the noodles!
  • Turn off the heat and add lots of ice to the pot to cool the noodles for about 10 minute Stir them to quicken the process.
  • Put the noodles in the glass, add Rooafzah/Rose Water, pour in milk, add a little crushed ice and stir. (Rooafzah is a sweet syrup added to milk or water for a drink in itself).
  • Top it off with a scoop or two of the Pista Kulfi Ice cream and enjoy!

6 cups ice cream (your choice of flavor)
1 1/4 cups caramel ice cream topping or 1 1/4 cups chocolate fudge topping
18 maraschino cherries
whipped cream, to garnish
candy sprinkles, to garnish

Steps:

  • Lightly grease 18 muffin pan cups.
  • Shape cookie dough into 18 balls.
  • Press the cookie dough onto bottoms and spread to the sides of the muffin pan cups.
  • Placw in preheated oven of 350 degrees.
  • Bake 14 to 18 minutes or until golden.
  • Let cool for 10 minutes, then transfer onto a wire rack.

2 tablespoons rice flour
10 cups milk (6%)
2/3 cup sugar
4 tablespoons pistachios, chopped
1 tablespoon rose water
1 teaspoon cardamom seed, chopped

Steps:

  • Mix the rice flour with 4 tablespoons of milk in a bowl.
  • Bring the rest of the milk to a boil and leave it on low heat simmering for 45 minutes, stirring periodically (don't let it burn).
  • Pour the rice flour mixture into the milk. Add the pistachios and sugar. Boil for another 10 mins and remove from heat.
  • Add the rose water and cardamom.
  • Leave it til it reaches room temperature, then pour the kulfi into a container and put into freezer.Stir every 20-30 minutes to break up the forming crystals.

This is my favourite Indian summer drink. It gets its name from the cornflour vermicelli that floats in it. Many people replace it with tiny pieces of jelly made of 'China Grass'. But an easy substitute is 'cellophane' noodles (bean starch noodles) which are soaked and boiled until transparent and then cut into short length.

2 1/2 cups cold milk
6 tablespoons rose syrup
3 tablespoons basil seeds, soaked for 4 hours
4 tablespoons sugar
3 scoops vanilla ice cream
1 1/2 tablespoons cornflour
2 cups water
1 1/4 cups ice water

  • Mix together cornflour and water.
  • Cook over low heat, stirring constantly until it begins to look transparent.
