LESLIE'S HAM LENTIL SOUP

Leslie's Ham Lentil Soup image

I originally called this my 'experimental lentil' soup, patching together various other lentil soup recipes. I've been making it every fall for a decade now. What's listed here is a single recipe, though I can't remember the last time I've made such a small batch. It's great for freezing in individual servings for lunches.

HEARTY LENTIL AND HAM SOUP

Hearty Lentil and Ham Soup image

Categories     Soup/Stew     Mushroom     Onion     Wheat/Gluten-Free     Ham     Lentil     Winter     Gourmet

Yield Makes about 3 1/2 quarts

Number Of Ingredients 10

1 leftover smoked ham bone or 2 smoked ham hocks
1 pound lentils (about 2 1/2 cups), picked over and rinsed
1/2 pound mushrooms, chopped (about 3 1/2 cups)
3 onions, chopped coarse
1 cup chopped carrot
1 cup chopped celery
1 cinnamon stick
1 bay leaf
3 1/2 cups beef broth
8 cups water

Steps:

  • In a 6- to 8-quart kettle combine all ingredients and simmer soup, covered partially, stirring occasionally, 1 1/2 hours. Discard bay leaf and cinnamon stick and remove meat from bone or hocks. Chop meat and stir into soup.

Tips:

  • Choose a meaty ham bone: For a flavorful soup, select a bone-in ham that's fully cooked. A bone with plenty of meat will yield a richer broth.
  • Soak the lentils: Soaking the lentils for at least 30 minutes (or up to overnight) helps to reduce cooking time and remove any phytic acid, which can interfere with nutrient absorption.
  • Use low-sodium broth: Since the ham bone will already contribute saltiness to the soup, opt for a low-sodium broth or water to prevent the soup from becoming too salty.
  • Add vegetables early: To maximize their flavor and nutrient content, add vegetables like carrots, celery, and onions early in the cooking process.
  • Season to taste: Before serving, taste the soup and adjust the seasonings as desired. Add more salt, pepper, or herbs until the flavors are balanced.

Conclusion:

This ham bone and lentil soup is a hearty, flavorful, and budget-friendly meal that's perfect for cold nights. With its protein-packed lentils and nutrient-rich vegetables, it's a wholesome and filling soup that the whole family will enjoy. Remember to follow the tips above to ensure your soup turns out perfectly every time. And feel free to experiment with different vegetables, herbs, and seasonings to create your own unique version of this classic soup.
