FABULOUS CHICKEN MARINADE FOR BBQ

Fabulous Chicken Marinade for BBQ image

We served this recently at a dinner in honor of our youngest daughter who just married. As usual, people were lining up for the recipe. I've used it since 1976, adapted from a recipe that apparently came from Cornell Cooperative Extension. I changed it slightly, but always receive rave reviews when we serve it to company.

MARINADE FOR BBQ CHICKEN

Marinade for BBQ Chicken image

I have played around with marinades and come up with this one that leaves the chicken flavourful and juicy. I use skinless chicken breasts or thighs. I would also use it for pork chops. This makes enough for 3 or 4 large breasts.

Tips:

  • Choose the right chicken pieces: Boneless, skinless chicken breasts or thighs are best for this marinade. If using chicken breasts, pound them to an even thickness so they cook evenly.
  • Make sure the marinade has enough time to penetrate the chicken: The longer the chicken marinates, the more flavorful it will be. Aim for at least 30 minutes, but you can marinate the chicken for up to 24 hours.
  • Use a variety of spices and herbs in your marinade: This will give the chicken a complex flavor. Some good options include garlic, onion, paprika, cumin, chili powder, and oregano.
  • Add some acidic ingredients to your marinade: This will help to tenderize the chicken and balance out the flavors. Good options include lemon juice, vinegar, or yogurt.
  • Don't forget the oil: Oil is necessary to help the marinade penetrate the chicken and prevent it from drying out. Olive oil or vegetable oil are both good choices.
  • Discard the marinade after use: Do not reuse the marinade, as it may contain harmful bacteria.

Conclusion:

This fabulous chicken marinade for BBQ is a great way to add flavor to your grilled chicken. With its simple ingredients and easy-to-follow instructions, this marinade is sure to become a staple in your grilling repertoire. So next time you're firing up the grill, be sure to give this marinade a try. You won't be disappointed!
