1 cup creamy peanut butter
2 cups powdered sugar (for candy)
powdered sugar (optional if you want to roll the candy in this.)
1/4 cup heavy cream
2 teaspoons vanilla

Steps:

  • Mix all ingredients in a large bowl.
  • Place waxed paper on the counter and put half the dough onto the paper.
  • Roll out (like playdough!) into a long snake. Repeat with the second half of the dough.
  • Wrap in the wax paper and refrigerate for 20 minutes (this is optional).
  • Optional: roll the peanut butter roll in powdered sugar. You can also add tiny chocolate chips as a mix-in when making this recipe!)

2 c sugar
2/3 c 2% milk
3 Tbsp heaping, peanut butter
I press dry roasted nuts on top ~ optional

Steps:

  • 1. Spray an 8 x 8 dish with non stick spray. In a medium sized saucepan, over medium heat, combine the milk & sugar, bring to a boil and continue boiling and stirring for 7 minutes.
  • 2. Remove from stove and stir in the peanut butter. Immediately pour into prepared dish. I sometimes use an 8 inch pie plate.
  • 3. I press a handful of dry roasted nuts, lightly into the candy. Cool, then slice into preferred size pieces.
