1 (12 ounce) package egg noodles
4 ¼ teaspoons kosher salt, divided
4 tablespoons salted butter, divided
5 teaspoons olive oil, divided
1 (8 ounce) package sliced fresh mushrooms
1 small white onion, minced
¼ cup all-purpose flour
2 cups milk
1 ½ cups chicken stock
2 tablespoons lemon juice
1 teaspoon Dijon mustard
½ teaspoon ground black pepper
1 ½ cups shredded white Cheddar cheese
1 cup frozen sweet peas
2 (6 ounce) cans tuna, drained
1 cup panko bread crumbs
¼ teaspoon ground paprika
2 tablespoons finely chopped fresh parsley

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

Steps:

  • 1. Boil a package (or two, if you want a lot) of the nice thick egg noodles that come from the frozen food section. Meanwhile, in a large bowl, empty two cans of drained white albacore tuna and flake with a fork. Add a can (or two) of cream of mushroom soup, a can of chicken noodle soup, about 2 cups of thawed frozen peas (or mixed veggies), a handful of cheddar or mozzarella cheese, a big dollup of sour cream, a dollup of mayonnaise, a shake of Johnny's seasoned salt, a tbs of dried minced onions and a small can of evaporated milk. Mix well and add the noodles after they are tender, and stir again.
  • 2. Turn mixture out into a 9x11 baking pan and top with shredded cheddar cheese, dried bread crumbs and French's Fried onions. Bake at 350 degrees til heated through and cheese is melted, about 30-40 minutes.
  • 3. This can also be made with canned white chicken or flaked salmon.
