1/2 teaspoon salt
1/2 teaspoon fresh black pepper
1 teaspoon ground cumin
1 teaspoon paprika
8 ounces medium shrimp or prawns in the shell, washed
2 tablespoons olive oil
1 red jalapeno chile or small red bell pepper, stemmed, seeded and julienned
1 large scallion, trimmed and thinly sliced on the diagonal
1 garlic clove, thinly sliced
Juice of 1 lime

Steps:

  • Combine the salt, pepper, cumin and paprika in a bowl. Add the shrimp and toss to coat evenly. Heat the oil in a large skillet over high heat. Saute the shrimp 1 to 2 minutes. Toss in the jalapeno or bell pepper, scallion and garlic and cook 1 minute longer. Remove from the heat, stir in the lime juice and serve.

3 tablespoons extra-virgin olive oil
1/2 teaspoon toasted sesame oil, optional

3/4 pound large shrimp, peeled
1 teaspoon orange zest
Orange wedges, for serving

Steps:

  • Heat oven to 425 degrees. In a large bowl, toss broccoli with 2 tablespoons olive oil, the sesame oil if using, 1/4 teaspoon salt and 1/8 teaspoon chile flakes. In a separate bowl, combine shrimp, remaining 1 tablespoon oil, the orange zest, remaining 1/4 teaspoon salt and remaining 1/8 teaspoon chile flakes.

1 onion
1/4 cup cayenne pepper
2 bay leaves
2 lbs shrimp (do not peel)
1/4 cup salt
ice water

Steps:

  • To 1 gallon of water add sliced lemon, sliced onion, bay leaves and pepper (NOT THE SALT) and boil for 10 minutes. Add the shrimp and boil 3 minutes. Remove from heat and immediately add 2 cups of ice water and salt. Let stand 5 minutes then drain. Enjoy!
