SMOKING BISHOP

Smoking Bishop image

''I'll raise your salary, and endeavour to assist your struggling family,'' Scrooge tells Bob Cratchit near the end of A Christmas Carol, ''and we will discuss your affairs this very afternoon, over a Christmas bowl of smoking bishop!'' This recipe, adapted from the book Drinking With Dickens, by Charles Dickens's great-grandson, Cedric, reflects Scrooge's new disposition and largesse perfectly: it's warm and sweet and meant for sharing. (To Cedric Dickens's recipe, I've added some fragrant cardamom pods, because years of drinking glogg have shown me how well they play with orange and wine, but you may omit them). If you're unable to find Seville oranges-marked by a pleasant, pronounced bitterness - substitute five navel oranges, and add the juice of one lemon when you add the port to the pan (do not stud the lemon with cloves or roast the lemon with the oranges).

Categories     cocktails

Number Of Ingredients 7

6 Seville oranges
1/2 cup Demerara sugar
1 bottle red wine (not too dry nor too sweet)
1 bottle Ruby port
30 cloves
5 dried green cardamom pods
Orange peel for garnish

Steps:

  • Preheat oven to 325 degrees. Prepare oranges for roasting: wash and dry them well, and stud each fruit equally with cloves. Roast the clove-studded fruits in the oven for an hour, then transfer them to a large glass or ceramic bowl.
  • Add the sugar and the red wine (do not add the port yet) to the bowl. Cover the bowl and leave it in a warm spot in the kitchen for at least 12 hours, and up to 24.
  • After the citrus-sugar-wine mixture has rested, cut the fruits in half and juice them through a strainer into the wine and sugar mixture. Discard fruits after they have been juiced. Strain the mixture again, this time into a heavy saucepan. Discard solids.
  • Add the port, the cinnamon stick, and the cardamom pods to the saucepan, and heat very slowly-until it "smokes" (the vapors rise), hence the name; do not allow it to boil.
  • Once the Bishop is as hot as you like, turn off the heat. Remove the cinnamon stick and cardamom pods. Serve in warmed, heatproof glasses, garnished with orange peel.

THE OXFORD BISHOP: 19TH CENTURY SPICED MULLED PORT WINE

The Oxford Bishop: 19th Century Spiced Mulled Port Wine image

A lovely Traditional old English recipe by Eliza Acton, a 19th Century Victorian cookery writer of great repute. This unique beverage is also mentioned in "The Christmas Carol" by Charles Dickens, although in the book it was called Smoking Bishop!! This is a fruity & spiced warm mulled Port Wine drink which brings a glow to your face & warmth to your aching joints, believe me! Just the festive beverage to have after returning from Christmas Midnight Mass or whilst listening to Carols from King's College on Christmas Eve. Also wonderful as a welcome drink for a party or special event. It is easily topped up if extra guests arrive, and I have used wine in the past when the port was finished!

ENGLISH BISHOP

English Bishop image

Categories     Bake     Orange     Simmer

Yield makes about 3/4 quart

Number Of Ingredients 4

1 orange
30 whole cloves
1 (750 ml) bottle ruby port
1 cup superfine sugar

Steps:

  • Preheat the oven to 400°F. Stud the orange with the cloves, place in a baking dish, and bake until the entire orange is browned, about 30 minutes. While still warm, carefully cut into quarters and place in a saucepan over medium heat. Add the port and simmer for 30 minutes. Remove the orange quarters, strain the liquid, and add the sugar. Allow to cool, strain out any debris, and bottle. Will keep for 2 weeks, refrigerated.

Tips:

  • Choose the right wine: Use a fruity, red wine with good acidity, such as Burgundy, Claret, or Port. Avoid using a wine that is too tannic or astringent, as this will make the bishop bitter.
  • Use fresh oranges: The zest and juice of fresh oranges add a bright, citrusy flavor to the bishop. Avoid using bottled or frozen orange juice, as it will not have the same flavor.
  • Sweeten to taste: The amount of sugar you add to the bishop will depend on your personal preference. Start with a small amount and add more to taste until the bishop is as sweet as you like it.
  • Serve chilled: Bishop is best served chilled. You can either refrigerate it for several hours before serving, or you can serve it over ice.

Conclusion:

Bishop is a delicious and refreshing drink that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste. So next time you are looking for a new cocktail to try, give bishop a try. You won't be disappointed!
