1/2 teaspoon cinnamon
1/4 teaspoon oregano
1/4 teaspoon black pepper
Pinch of ground ginger
1 1/2 cup chicken broth
3/4 cup sour cream or plain Greek yogurt
2 Tablespoons butter
1/2 large sweet onion (diced)
1 red bell pepper (diced)
1 can diced green chilies
3 cups cooked (shredded chicken)
1 1/2 cups grated pepperjack cheese (divided)
Salt and pepper (to taste)
8 flour or corn tortillas
2 green onions (chopped)
1/2 bunch fresh cilantro (chopped)
1 avocado (sliced)

Steps:

  • Make the sauce by pulsing the jalapeno and garlic in a food processor or blender to mince, then adding the remaining sauce ingredients and processing to combine. Set aside.
  • Preheat oven to 425 degrees F. In a large skillet, melt the butter over medium heat, then add the onion and bell pepper. Season with a little salt and pepper and saute until soft, about 5 minutes. Add the green chilies during the last minute.

6 scallions, thinly sliced
Coarse salt and ground pepper
1 can (15 ounces) pumpkin puree
4 cloves garlic, peeled
1 jalapeno chile, quartered (remove ribs and seeds for less heat, if desired)
1 teaspoon chili powder
8 corn tortillas (6-inch)
1 1/2 cups grated sharp white cheddar cheese (6 ounces)

Steps:

  • Preheat oven to 425 degrees. In a medium bowl, combine chicken and scallions. Season generously with salt and pepper; set aside.

2 large corn tortillas

1 slice fat-free Cheddar cheese, halved
1/4 cup shredded fat-free Cheddar cheese
Salt and black pepper, optional
Fat-free sour cream, optional

Steps:

  • Preheat oven to 400 degrees F.

½ red onion (diced)
½ green bell pepper (diced)
12 oz pork chorizo or soyrizo
½ lb tomatoes (chopped)
15 oz pumpkin puree

2 jalapeños (de-seeded and sliced)
8 oz can tomato sauce
4 oz can diced green chilies
1 tsp cumin
1 tsp chili powder
1 tsp nutmeg
½ tsp cayenne pepper
½ tsp cocoa powder

6 large flour tortillas
2 cups cheddar cheese (shredded)

sour cream
avocado

Steps:

  • Preheat the oven to 350°F.
  • Add the olive oil to a large skillet over medium-high heat.
  • Once warm, add the onions and bell peppers.
  • Cook for 5-7 minutes then add the chorizo, or soyrizo, and cook for an additional 4-6 minutes, then set aside.

  • Take any remaining sauce and pour it over the top.

  • Place in the oven and bake for 15-20 minutes.
  • Remove from the oven and top with the optional toppings of your choice.

I found this recipe in the Star Tribune last weekend and thought I'd give it a try. The pumpkin sauce is very creamy and luscious- it would be great with pasta I think. I made a few changes- added a can of corn to the filling and added an additional 15 0z. can of pumpkin to the sauce after I realized the original recipe made a thinner sauce than I wanted (alternatively, I could have added less water, but it was too late). This is really great comfort food!

6 green onions, thinly sliced

3/4 cup enchilada sauce, divided
2/3 cup canned pumpkin
