Time 1h20m

Yield 4

Number Of Ingredients 15

2 bone-in chicken breast halves
2 cups chicken broth
¼ white onion
1 clove garlic
2 teaspoons salt
1 pound fresh tomatillos, husks removed
5 serrano peppers
¼ white onion
1 clove garlic
1 pinch salt
12 corn tortillas
¼ cup vegetable oil
1 cup crumbled queso fresco
½ white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green). Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed. Pour salsa in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

ENCHILADAS VERDES

Enchiladas Verdes image

I learned this recipe from an amazing cook from Puebla. I've been perfecting it for over 15 years and realized that it was time to share it when my foodie friends tried to drink the sauce out of the saucepan. I use the roasted or baked chicken from the grocery store. I did it once only to save time, but found that they are tastier. Be conservative with the cream and the cheese. Do not use sour cream!

Time 1h

Yield 9

Number Of Ingredients 12

2 cloves garlic
3 serrano peppers
2 ¼ pounds small green tomatillos, husks removed
1 cup vegetable oil for frying
9 corn tortillas
3 cups water
4 teaspoons chicken bouillon granules
½ store-bought rotisserie chicken, meat removed and shredded
¼ head iceberg lettuce, shredded
1 cup cilantro leaves
1 (8 ounce) container Mexican crema, crema fresca
1 cup grated cotija cheese

Steps:

  • Cover a large griddle with aluminum foil and preheat to medium-high.
  • Cook the garlic, serrano peppers, and tomatillos on the hot griddle until toasted and blackened, turning occasionally, about 5 minutes for the garlic, 10 minutes for the peppers, and 15 minutes for the tomatillos. Remove to a bowl and allow to cool.
  • Heat oil in a small, deep skillet to 350 degrees F (175 degrees C). Using kitchen tongs, fry the tortillas individually, turning them once. They shouldn't be in the hot oil for more than 5 seconds per side. Remove excess oil with paper towels and keep warm. Remember that the hotter the oil, the less that the tortillas will absorb.
  • Place the toasted garlic, serrano peppers, tomatillos, and the water in a blender and blend until smooth; pour into a saucepan over medium heat and bring to a boil. Dissolve the chicken bouillon into the mixture, reduce heat to medium-low, and cook at a simmer until slightly thickened, about 10 minutes. The sauce shouldn't be too thick.
  • Soak three tortillas in the sauce, one at a time, for a few seconds, fill them with shredded chicken, sprinkle the meat with some of the sauce, roll them and place them seam side down on a pasta bowl. Spoon a generous amount of sauce over them and top them with lettuce, cilantro, crema, and cotija cheese. Pour a little more sauce over the whole thing if desired. Repeat the procedure twice more. Serve immediately.

SPICY ENCHILADAS VERDES DE QUESO

SPICY Enchiladas Verdes de Queso image

My mother-in-law hails from the small town of Alpoyeca, Guerrero in Mexico. She makes the most delicious Enchiladas Verdes, and I wanted to share this authentic Mexican recipe with everyone. A word of warning, I am not going to alter her recipe so people who can't handle spiciness might want to add more water or less jalapenos. Enjoy!

Provided by red5

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h40m

Yield 5

Number Of Ingredients 15

5 jalapeno peppers, stems removed
3 fresh tomatillos, husks removed - stemmed and halved
½ yellow onion
2 cloves garlic
1 ½ teaspoons ground cumin
water, or as needed to cover
⅓ cup vegetable oil
1 ½ cubes chicken bouillon
1 sprig fresh cilantro
vegetable oil
20 (6 inch) corn tortillas
1 (12 ounce) package queso fresco (Mexican fresh cheese), shredded
½ head lettuce, shredded
1 small red onion, chopped
5 tablespoons sour cream, or to taste

Steps:

  • Place jalapeno peppers, tomatillos, yellow onion, garlic, and cumin in a blender; pour in enough water to cover the vegetables. Blend until liquified, about 1 minute.
  • Heat 1/3 cup vegetable oil in a skillet over medium-high heat just until oil has begun to warm, about 30 seconds; pour the blended jalapeno mixture into the oil. Stir in chicken bouillon cubes and cilantro. Reduce heat to medium and cook sauce for 30 minutes, stirring occasionally. Remove green sauce from heat and allow to stand while you complete remaining steps.
  • Heat 1 cup vegetable oil in a skillet over medium heat. Using a tongs, place each tortilla into the hot oil and fry for a few seconds on each side. Tortillas will be pliable; do not overcook.
  • Immerse the fried tortilla into the green sauce to coat; place tortilla on a serving plate. Sprinkle tortilla with about 2 teaspoons shredded queso fresco cheese and roll into a thin enchilada. It's easiest if one person is frying tortillas while another person dips in sauce, fills with cheese, and rolls the tortillas.
  • Place enchiladas onto serving plates; spoon with remaining green sauce and sprinkle with remaining queso fresco cheese. Spread shredded lettuce over the enchiladas and sprinkle with chopped red onion. Top servings with a tablespoon of sour cream.

AUTHENTIC MEXICAN ENCHILADAS VERDES

Authentic Mexican Enchiladas Verdes image

My sister-in-law was born and raised in Mexico City. She taught me how to make these. They take some time, but for those of us who love to cook and enjoy the fruits of our labor - this will be a real treat. You will need a blender or food processor for the sauce. This recipe makes 24 enchiladas. Enough for a crowd, or to freeze. If you are going to take this much time, you may as well have plenty! It can be halved, if you prefer. The sauce and stuffing can be prepared in advance.

Time 1h50m

Yield 6

Number Of Ingredients 11

12 Anaheim chile peppers
2 tablespoons all-purpose flour
4 cups buttermilk, divided
2 teaspoons salt, or as needed
1 pound skinless, boneless chicken breast halves
½ cup canola oil for frying
12 (6 inch) white corn tortillas, or more as needed
1 white onion, diced
1 ½ cups shredded Monterey Jack cheese
¼ cup crumbled queso fresco
½ cup Mexican crema (cream)

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil.
  • Arrange peppers on prepared baking sheet.
  • Broil peppers in the preheated oven until skins begin to blister and turn black, about 5 minutes. Turn peppers and repeat until other side is evenly blistered and blackened.
  • Place peppers in a plastic resealable bag, seal, and cover with a kitchen towel. Let peppers sit so the steam loosens the outer skin, about 10 minutes. Remove peppers from bag and rub off blackened skin. Break open and remove seeds and stem.
  • Blend peppers, flour, and 2 cups buttermilk in a blender until creamy. Transfer to a medium skillet over medium-low heat. Add remaining 2 cups buttermilk and stir. Season with salt. Simmer until sauce is thickened, 5 to 10 minutes. Set aside.
  • Bring a large pot of lightly salted water to a boil; add chicken. Boil until chicken is no longer pink and juices run clear, about 25 minutes. Drain, cool, and shred chicken.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat canola oil in a large skillet over medium heat. Fry corn tortillas in hot oil, working in batches, until just softened, 1 to 2 minutes. Transfer to a paper towel-lined plate.
  • Pour about 1 cup of pepper enchilada sauce into the bottom of a 9x13-inch baking dish.
  • Fill each tortilla with shredded chicken, diced onion, and 1 to 2 tablespoons Monterey Jack cheese. Roll tortilla around the filling and place seam-side down into the pepper enchilada sauce in the baking dish. Top enchiladas with remaining pepper sauce, remaining Monterey Jack cheese, and queso fresco.
  • Bake in the preheated oven until sauce is bubbling and cheese is melted, 20 to 25 minutes. Top with Mexican crema to serve.

KALE-POTATO ENCHILADAS VERDES

Kale-Potato Enchiladas Verdes image

Provided by Marcela Valladolid

Categories     main-dish

Time 2h15m

Yield 10 enchiladas

Number Of Ingredients 18

Salt
2 pounds husked and rinsed tomatillos
2 cloves garlic
1 large bunch fresh cilantro, thick stems removed
1 large jalapeno (optionally seeded)
1/4 large white onion
2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
Salt and freshly ground black pepper
1 tablespoon olive oil
2 cloves garlic, minced
1/4 large onion, chopped
2 cups loosely packed chopped kale (thick stems removed)
1 tablespoon unsalted butter
1/2 cup Mexican crema
1 1/4 cups shredded Monterey Jack cheese
Nonstick cooking spray, for spraying the baking dish
Vegetable oil, for frying the tortillas
10 tortillas

Steps:

  • For the salsa verde: Bring a large pot of water to a boil and add some salt. Add the tomatillos, garlic, cilantro, jalapeno and onion and bring back to a boil. Boil until the tomatillos turn olive green, about 10 minutes. Strain, reserving 1 cup of the cooking liquid. Transfer the ingredients from the pot to a blender with the reserved cooking liquid and puree until smooth. Return the mixture to the same (empty) pot, bring to a boil and boil until the sauce is darker green and reduced, 20 to 25 minutes. Season with 1 teaspoon salt or to taste and set aside.
  • For the enchiladas: Put the potatoes in a pot with enough water to cover, add some salt and cover the pot. Bring to a boil, lower to a simmer and simmer until the potatoes are fork-tender, 15 to 20 minutes. Drain and set aside.
  • Heat the olive oil in a large pan. Add the garlic and onion and saute until golden, about 5 minutes. Add the kale and saute until wilted, about 5 minutes more. Mix in the butter and 1/4 cup of the crema until melted and smooth. Gently mix in the potatoes and 1 cup of the cheese. Season to taste with salt and pepper. Set the filling aside.
  • Preheat the oven to 350 degrees F. Spray a 13-by-9-inch glass baking dish with nonstick cooking spray.
  • Heat enough vegetable oil to come 1 inch up the sides of a skillet to 350 degrees F over medium heat. Make an assembly line close to the stove top. Place half of the salsa verde in a cake pan (reserve the rest for topping) and put a cutting board and the potato-kale filling nearby.
  • Dip a tortilla in the hot oil until golden but still pliable. Using tongs, transfer it to the cake pan with the salsa verde and turn to coat. Place the dipped tortilla on the cutting board, stuff with a scant 1/4 cup of the potato-kale filling and roll up. Repeat with the remaining tortillas, salsa verde and filling.
  • Transfer the stuffed tortillas to the prepared baking dish. Top with the reserved salsa verde and remaining 1/4 cup crema and 1/4 cup cheese. Bake until darkened in spots, about 30 minutes. Serve slightly cooled.

ENCHILADAS VERDES

Enchiladas Verdes image

After watching this episode of America's Test Kitchen, I had to make this! I used canned tomatillos and poblano chiles (28 oz. can) and it tasted wonderful! So fresh and delicious! I didn't think it was too spicy, even using Pepper Jack cheese. Here are the comments from their original recipe: "You can substitute three 11-ounce cans of tomatillos, drained and rinsed, for the fresh ones in this recipe. Halve large tomatillos (more than 2 inches in diameter) and place them skin-side up for broiling to ensure even cooking and charring. If you can't find poblanos, substitute 4 large jalapeño chiles (with seeds and ribs removed). To increase the spiciness of the sauce, reserve some of the chiles' ribs and seeds and add them to the food processor."

1/2 teaspoon ground cumin

8 ounces monterey jack pepper cheese (2 cups, I used 12 oz. or about 3 cups) or 8 ounces monterey jack cheese, grated (2 cups, I used 12 oz. or about 3 cups)
12 (6 inch) corn tortillas (I used 8 8-inch flour tortillas)
2 medium scallions, sliced thin
thinly sliced radish
sour cream

Steps:

  • Heat 2 teaspoons oil in medium saucepan over medium heat until shimmering; add onion and cook, stirring frequently, until golden, 6 to 8 minutes.
  • Add 2 teaspoons garlic and cumin; cook, stirring frequently, until fragrant, about 30 seconds.
  • Decrease heat to low and stir in broth.
  • Add chicken, cover, and simmer until instant-read thermometer inserted into thickest part of chicken registers 160 degrees, 15 to 20 minutes, flipping chicken halfway through cooking.
  • Transfer chicken to large bowl; place in refrigerator to cool, about 20 minutes.
  • Remove 1/4 cup liquid from saucepan and set aside; discard remaining liquid.
  • If using fresh tomatillos and poblano chiles adjust oven racks to middle and highest positions and heat broiler (if using canned, skip to step 11 ).
  • Toss tomatillos and poblanos with remaining 2 teaspoons oil; arrange on rimmed baking sheet lined with foil, with poblanos skin-side up.
  • Broil until vegetables blacken and start to soften, 5 to 10 minutes, rotating pan halfway through cooking.
  • Cool 10 minutes, then remove skin from poblanos (leave tomatillo skins intact).
  • Transfer tomatillos and chiles to food processor.
  • Set oven temperature to 350 degrees.
  • Discard foil from baking sheet and set baking sheet aside for warming tortillas.
  • Add 1 teaspoon sugar, 1 teaspoon salt, remaining teaspoon garlic, and reserved cooking liquid to food processor; process until sauce is somewhat chunky, about eight 1-second pulses.
  • Taste sauce; season with salt and pepper and adjust tartness by stirring in remaining sugar, 1/2 teaspoon at a time.
  • Set sauce aside (you should have about 3 cups).
  • When chicken is cool, pull into shreds using hands or 2 forks, then chop into small bite-sized pieces.
  • Combine chicken with cilantro and 1 1/2 cups cheese; season with salt.
  • Smear bottom of 13- by 9-inch baking dish with 3/4 cup tomatillo sauce.
  • Place tortillas on 2 baking sheets; spray both sides of tortillas lightly with cooking spray.
  • Bake until tortillas are soft and pliable, 2 to 4 minutes.
  • Increase oven temperature to 450 degrees.
  • Place warm tortillas on countertop and spread 1/3 cup filling down center of each tortilla.
  • Roll each tortilla tightly and place in baking dish, seam-side down.
  • Pour remaining tomatillo sauce over top of enchiladas; use back of spoon to spread sauce so that it coats top of each tortilla.
  • Sprinkle with remaining cheese and cover baking dish with foil.
  • Bake enchiladas on middle rack until heated through and cheese is melted, 15 to 20 minutes.
  • Uncover, sprinkle with scallions, and serve immediately, passing radishes and sour cream separately.

AUTHENTIC MEXICAN ENCHILADAS VERDES

AUTHENTIC MEXICAN ENCHILADAS VERDES image

Categories     Chicken     Bake     Casserole/Gratin

Yield 12 People

Number Of Ingredients 24

Verde Sauce
3 quarts water
25 medium tomatillos, husked
3 onions, halves peeled
10 garlic cloves, peeled
10 serrano chilies, seeded (Can be adjusted to taste, I use latex gloves, watch those
eyes!!!)
30 sprigs fresh cilantro
2/3 cup vegetable oil
2 slices onions
salt
Stuffing
2 quarts water
3 whole chicken breasts, halved
1 medium onion, thickly sliced
4 garlic cloves, peeled
Tortillas
1 1/2 cups vegetable oil
24 (5 inch) corn tortillas (freshest you can find)
Garnish
15 sprigs fresh cilantro
1/2 cup chopped onion
3 cups creme fraiche or sour cream
4 cups grated monterey jack cheese

Steps:

  • Prepare sauce: Heat water in large pot to boiling. Add tomatillos, 2 onion halves, 6 garlic cloves, and 7 serrano chiles. Simmer uncovered 30 minutes. Let cool slightly, then drain, reserving about 1 cup cooking liquid. Place solids in blender or food processor. Add remaining onion half, 4 garlic cloves, 3 chiles, the cilantro, and about 1/2 cup cooking liquid. Process until smooth. Heat oil in medium saucepan. Add onion slices and saute until lightly browned. theme Stir in sauce and season with salt. Simmer uncovered until slightly thickened, about 30- 45 minutes. If sauce thickens too much, thin it with remaining cooking liquid. Meanwhile, when the sauce ingredients are simmering, prepare stuffing. Heat 2 qt water in large pot to boiling. Add chicken, onion, garlic, and salt to taste. Simmer just until chicken is cooked through, about 30 minutes. Let cool, then remove chicken from liquid. Remove and discard skin and bones; shred meat. Prepare tortillas: When the sauce is nearly ready and the stuffing is ready, heat small amount of oil in skillet over medium heat. Cook tortilas one at a time, turning once, just until flexible but not crisp, about 20 seconds each. Drain on a thick layer of paper towels wrapped up inside a clean cloth kitchen towel (or tortilla warmer). This will drain them and keep them soft and warm. Heat oven to 350 degrees F. Coat two 13 X 9 baking pans with vegetable oil. Dip each tortilla in sauce. Fill tortillas with shredded chicken and roll up. Arrange a dozen filled tortillas in each pan. Top with green sauce. Spoon creme fraiche (or sour cream) over sauce. Sprinkle chopped onion and cilantro over the top. Sprinkle cheese over all. Bake for 25 minutes. Broil briefly if the top needs some browning

ENCHILADAS VERDES

Enchiladas Verdes image

If you eat all of the Double-Herb Roasted Chicken, use a prepackaged rotisserie chicken (available in the meat section of the supermarket) for this recipe. Asadero, originally from Mexico, is a semisoft cow's milk cheese with a bright, pungent flavor.

ENCHILADAS VERDES

Enchiladas Verdes image

Provided by Kelsey Nixon

Time 45m

Yield serves 4

Number Of Ingredients 15

2 bone-in chicken breast halves
2 cups chicken stock
1/4 white onion
1 clove garlic
2 tsp. salt
1 pound fresh tomatillos, husks removed
3 serrano peppers
1/4 white onion, diced
1 clove garlic, minced
1 pinch salt
12 white corn tortillas
1/4 cup vegetable oil
1 cup crumbled queso fresco
1/2 white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • 1. In a saucepan, combine chicken breast with chicken stock, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a light boil, and then simmer for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • 2. In a separate saucepan, place tomatillos and serrano chilies in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull color). Strain tomatillos and chilies, and place in saucepan with diced onion, minced garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies by about an inch. With an immersion (stick) blender, blend all ingredients until they are completely pureed. Bring to a low boil.
  • 3. Pour vegetable oil in a large frying pan over medium/high heat. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • 4. Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

Categories     Chicken

Time 50m

Yield 12 enchiladas, 4 serving(s)

Number Of Ingredients 13

2 chicken breast halves
2 cups chicken broth
1/4 white onion (chunk)
1/4 white onion (chopped)
1 garlic clove (minced)
2 teaspoons salt
1 (28 ounce) can green enchilada sauce (I use Las Palmas)
1/4 cup vegetable oil
2 cups Kraft Mexican Style Finely Shredded Four Cheese
1 bunch fresh cilantro, chopped
1 cup sour cream
2 (4 1/2 ounce) cans chopped green chilies (drained)
12 corn tortillas (fresh as possible)

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes.
  • Set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • Pour green chile enchilada sauce in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil.
  • Finally, dip slightly fried tortillas in low-boiling green chile enchilada sauce for just a moment to cover.
  • After frying the tortillas and dipping in the green chile enchilada sauce, mix up the cooked shredded chicken with just enough sour cream to bind it, the onions, chopped green chiles, and 1 cup cheese.
  • Fill each tortilla with the chicken mixture, and a little green chile enchilada sauce. Roll them up, put them in 9X13 can, and cover with remaining green chile enchilada sauce and remaining 1 cup shredded mexican cheese,.
  • Bake in a 425 degree oven until cheese is melty (20 min?).
  • Top with crumbled/shredded cheese, chopped onion, and chopped cilantro and serve.

Tips:

  • Prep Your Ingredients: Before you start cooking, chop your vegetables and gather your ingredients. This will save you time and ensure that you don't miss anything important.
  • Use Fresh Ingredients: Fresh ingredients will give your enchiladas the best flavor. If possible, use fresh herbs, vegetables, and salsa.
  • Don't Overcook the Chicken: Chicken can easily become dry and tough if it's overcooked. Cook it until it's just cooked through, about 10-12 minutes.
  • Make Sure the Sauce is Hot: The sauce should be hot when you add it to the enchiladas. This will help to melt the cheese and prevent the tortillas from becoming soggy.
  • Don't Overfill the Enchiladas: Overfilling the enchiladas will make them difficult to roll and may cause them to fall apart.
  • Bake the Enchiladas Until They're Golden Brown: The enchiladas should be baked until they're golden brown and bubbly. This will ensure that they're cooked through and have a nice crispy texture.
  • Serve the Enchiladas with Your Favorite Toppings: Enchiladas can be served with a variety of toppings, such as sour cream, guacamole, salsa, and cheese.

Conclusion:

Enchiladas verdes are a delicious and versatile dish that can be enjoyed by people of all ages. They're perfect for a weeknight dinner or a special occasion.
