Time 1h45m

2 (28 ounce) cans Italian plum tomatoes, undrained
1 cup cider vinegar

1 large onion, peeled and diced
1 cup finely chopped celery
3/4 cup packed brown sugar
2 teaspoons coarse salt

Tips for Making the Best Elitetwigs Tomato Chilli Sauce:

  • Use ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the final sauce. Look for ripe, juicy tomatoes with a deep red color.
  • Roast your tomatoes: Roasting the tomatoes before making the sauce concentrates their flavor and gives them a smoky, caramelized taste.
  • Use a variety of chili peppers: This will give your sauce a complex flavor profile. Use a combination of fresh and dried peppers, and be sure to adjust the amount of peppers you use depending on your desired heat level.
  • Simmer the sauce for a long time: This will allow the flavors to meld and develop. Simmer the sauce for at least 30 minutes, or up to 2 hours if you have the time.
  • Add some sweetness: A little bit of sweetness can help to balance out the heat of the chili peppers. Add a tablespoon or two of honey, sugar, or maple syrup to the sauce.
  • Season the sauce to taste: Add salt, pepper, and other spices to taste. You can also add a bit of acidity with lemon juice or vinegar.
