2 tablespoons salted butter
3 pounds Yukon Gold potatoes, peeled and very thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
1 cup shredded Gruyère
1 cup shredded sharp Vermont white Cheddar
1/2 cup shredded fontina cheese
2 cups heavy cream
2 cloves garlic, minced
1/4 teaspoon grated nutmeg
1/2 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 12-inch cast-iron skillet. Arrange half of the potatoes in the skillet. Sprinkle with salt and pepper, half the chives, and half of each of the Gruyère, Cheddar and fontina cheeses. Repeat the layers once.
  • Heat the cream, garlic, nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan over medium heat until bubbles form around the edges, about 3 minutes. Remove from the heat and stir in the sour cream. Pour the cream mixture over the potatoes in the skillet. Cover tightly with aluminum foil. Bake until the potatoes can be easily pierced with a knife, about 45 minutes.
  • Uncover and bake until the cheese is browned and the edges are bubbly, about 15 minutes. Broil for 2 minutes, if desired. Remove the skillet from the oven and sprinkle with more chives before serving.

I rarely crank up the oven in the hot months, but find myself wanting things that are normally cooked in the oven. These are a delicious way to make potatoes and avoid heating up your kitchen.

4 medium russet potatoes
1-2 c grated cheese, your favorites
parmesan cheese, opt
salt and pepper to taste
PICO DE GALLO VERSION
1 c pico de gallo

Steps:

  • 1. If leaving skin on be sure to wash and dry your potatoes. If not remove skin. Slice very thinly, I like to use the thinnest slice on my mandolin.
  • 2. Spray bottom of elec. skillet with non stick spray. Place one layer of potatoes slightly overlapping, then season with your favorite potato seasonings, then sprinkle some grated cheese on. There is no right or wrong amount of cheese, just use what you feel comfortable using. You can also sprinkle on some Parmesan as well if desired.
  • 3. Repeat with layer of potatoes, seasoning and cheese. If you don't have enough potatoes, wash and cut more. You can make as much or as little as you like, cooking time may be longer for a full skillet.
  • 4. Place lid on and turn skillet to the very lowest setting. On mine it is just above warm. I stand and watch for a minute to see if it cuts on and then off after a minute. You don't want to have the skillet stay on continuously, the potatoes on the bottom will burn. After about 30 min. insert a fork and see if they are fork tender, if not, cook a little while longer. Let cool for about 15 min with lid off before serving.
  • 5. NOTE: You could add sliced or diced onions, herbs, or even cooked meat (bacon) to the layers. Also any other vegetable that would not take longer than the potatoes to cook.
  • 6. Pico de gallo version: Add 1/2 c of pico to first layer of potatoes. After potatoes are done, garnish with the other 1/2 c.

2 tablespoons salted butter
6 to 7 medium Yukon gold potatoes, sliced thin
1 medium onion, sliced thin
3 cloves garlic, sliced
Kosher salt and freshly ground black pepper
1 cup heavy cream
3 ounces sliced ham
2 cups shredded mild Cheddar
Sour cream, for serving
Sliced green onions, for garnish

Steps:

  • Heat the butter in a large skillet over medium heat. When the butter has melted, add the potatoes, onion and garlic. Stir and cook until the potatoes and onions begin to soften, 6 to 7 minutes. Season with a good pinch of salt and pepper. Add the cream, then bring to a low simmer and cover. Cook until the potatoes are cooked through, another 6 to 8 minutes.
  • Meanwhile, set the oven to broil and move the rack to the center.
  • Remove the lid from the skillet and sprinkle the ham over the top followed by the cheese. Place the skillet under the broiler and watch until the cheese is melted and brown, about 5 minutes.
  • Garnish with the sour cream and green onions.

1/2 cup minced onion
1 teaspoon salt
1 3/4 cups milk
1/2 cup cheddar cheese
pepper
1/4 cup crushed crackers or 1/4 cup breadcrumbs
1 teaspoon parsley

Steps:

  • Combine potatoes with onion, salt and milk, simmer, covered, for 45 minutes, or until tender.
  • Sprinkle cheese, pepper and crumbs over top. Continue cooking, uncovered, for 20 minutes. Reduce to "warm" for serving. Makes 6 to 8 servings.
