BELL PEPPER EGG-IN-A-HOLE
Fresh, sweet bell peppers are a nice foil for the richness of the sunny yellow yolks. We lightened up the usual egg-in-a-hole by using bell peppers in place of the fried bread slices and serving the eggs on multigrain toast.

Steps:
- Put bell pepper rings in a pan that has the butter melted in it. saute for a coupla minutes with lid on on low to desired doneness of bell pepper
- Put thin slices of tomato inside ring.
- Break egg into 1 ring.
- Salt and pepper.
- Put dill on top of egg. I think basil, parsley, or chives would work also.
- you can put some shredded cheese on here if you wish
- Cover with lid and cook until yolk is hard. You may need a little water, like 1 teaspoon, to steam. Some of the yolks were soft so it must be to a person's preference.
Tips:
- Choose the right bell peppers: Look for firm, brightly colored bell peppers with smooth skin. Avoid any peppers with blemishes or bruises.
- Prepare the bell peppers properly: Cut the bell peppers in half lengthwise and remove the seeds and ribs. You can also slice the peppers into rings if you prefer.
- Use fresh eggs: Fresh eggs will give you the best results. If you don't have fresh eggs, you can use older eggs, but they may not be as fluffy.
- Season the eggs well: Don't be afraid to season the eggs with salt, pepper, and other herbs and spices. This will help to add flavor to the dish.
- Cook the eggs slowly: Cook the eggs over low heat so that they have time to cook through without overcooking.
- Serve the eggs immediately: Eggs in bell pepper rings are best served immediately after they are cooked. This will help to prevent the eggs from becoming tough.
Conclusion:
Eggs in bell pepper rings is a quick and easy breakfast or brunch recipe that is perfect for any occasion. It is a healthy and delicious way to start your day, and it is also a great way to use up leftover bell peppers. With a few simple tips, you can make this dish perfectly every time.
