Serve it with pita bread, a good rosé and a hunk of feta, and want for nothing more.

Tips:

  • Choose the right eggplant: For the best flavor and texture, select small to medium-sized eggplants that feel heavy for their size. Avoid eggplants that are too large or have blemishes or bruises.
  • Roast the eggplant properly: Roasting the eggplant is the key to achieving a smoky, flavorful salad. Make sure to roast the eggplant until it is tender and slightly charred. This will bring out its natural sweetness and make it easier to peel.
  • Use fresh herbs: Fresh herbs, such as dill and garlic, are essential for adding brightness and flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Don't overdress the salad: A little bit of dressing goes a long way in this salad. Overdressing will weigh it down and make it less flavorful. Add the dressing just before serving and toss gently to coat the eggplant and vegetables.

Conclusion:

This eggplant salad with dill and garlic is a delicious and easy-to-make dish that is perfect for summer. It is a great way to use up fresh eggplant and herbs, and it can be served as a side dish, appetizer, or even a main course. With its smoky, flavorful eggplant, bright herbs, and tangy dressing, this salad is sure to be a hit at your next gathering.
