1 cup Self-Rising Flour
1/2 cup Self-Rising Corn Meal
1 Tablespoon granulated Sugar
1/2 teaspoon Salt
Warm water as needed.
Cooking oil for frying.

Steps:

  • Place flour in a medium sized mixing bowl.
  • Add the corn meal.
  • Add the sugar.
  • Add the salt.
  • Mix all the dry ingredients together.
  • Gradually add enough warm water to make a thick batter. Set aside.
  • Heat cooking oil in a deep pot until oil reaches 350F degrees for frying.
  • Scoop batter by the Tablespoonful and carefully drop into the hot oil.
  • Let the puppies cook until golden brown on the bottom.
  • Flip puppies over in the oil if they do not flip on their own.
  • Fry until golden brown all over.
  • Remove when done and place in a paper towel lined bowl to cool.

2 large eggplants, peeled and cubed
salt
1/2 cup yellow cornmeal
1 cup flour (I use 1/2 whole wheat, 1/2 white)
1 1/2 teaspoons baking powder
2 tablespoons onions, finely chopped
oil, for deep-frying

Steps:

  • Put the eggplant cubes into a colander and steam, covered, over boiling water until tender, about 25 minutes.
  • Sprinkle with salt and set aside.
  • Meanwhile, combine the corn meal, flour, baking powder and 1 1/2 teaspoons salt in a bowl.
  • Push the eggplant through the colander into the bowl in small amounts, mixing in enough eggplant to make a medium stiff dough.
  • Stir in the onions.
  • Set the mixture aside for 15 to 30 minutes.
  • Drop the mixture by teaspoonfuls into deep oil heated to 365 degrees and fry until golden.
  • Drain on paper towels.

1 lb unpeeled eggplant, sliced-about 12 (1/2 inch slices)
1/3 cup fine dry breadcrumb
1/3 cup grated parmesan cheese (or parmesan alternative, like asiago)
1/2 teaspoon dried Italian seasoning
vegetable oil cooking spray

Steps:

  • Combine first 2 ingredients, stir well.
  • Spread evenly over both sides of eggplant slices.
