Categories     Entree

Number Of Ingredients 17

1.5 lb eggplant (cut into cubes)
Kosher salt
Extra Virgin Olive Oil
1 large yellow onion (chopped)
1 green bell pepper (stem and innards removed, diced)
1 carrot (chopped)
6 large garlic cloves (minced)
2 dry bay leaves
1 to 1 1/2 tsp sweet paprika OR smoked paprika
1 tsp organic ground coriander
1 tsp dry oregano
3/4 tsp ground cinnamon
1/2 tsp organic ground turmeric
1/2 tsp black pepper
1 28- oz can chopped tomato
2 15- oz cans chickpeas (reserve the canning liquid)
Fresh herbs such as parsley and mint for garnish

Steps:

  • Heat oven to 400 degrees F.
  • Place eggplant cubes in a colander over a large bowl or directly over your sink, and sprinkle with salt. Set aside for 20 minutes or so to allow eggplant to "sweat out" any bitterness. Rinse with water and pat dry.
  • In a large braiser, heat 1/4 cup extra virgin olive oil over medium-high until shimmering but not smoking. Add onions, peppers, and chopped carrot. Cook for 2-3 minutes, stirring regularly, then add garlic, bay leaf, spices, and a dash of salt. Cook another minute, stirring until fragrant.
  • Now add eggplant, chopped tomato, chickpeas, and reserved chickpea liquid. Stir to combine.
  • Bring to a rolling boil for 10 minutes or so. Stir often. Remove from stove top, cover and transfer to oven.
  • Cook in oven for 45 minutes until eggplant is fully cooked through to very tender. (While eggplant is braising, be sure to check once or twice to see if more liquid is needed. If so, remove from oven briefly and stir in about 1/2 cup of water at a time.)
  • When eggplant is ready, remove from oven and add a generous drizzle of Private Reserve EVOO, garnish with fresh herbs (parsley or mint). Serve hot or at room temperature with a side of Greek yogurt or even Tzatziki sauce and pita bread.

MIDDLE EASTERN STUFFED AUBERGINES

Middle Eastern Stuffed Aubergines image

Stuffed aubergines cooked the Middle Eastern way in tomato sauce. These stuffed aubergines/eggplants are made vegan as they're stuffed with just rice, veggies, spices and no meat!

Provided by Diana

Categories     Main Course

Time 1h15m

Number Of Ingredients 16

16 baby aubergines
1 cup (175g) uncooked rice
2 tomatoes (diced)
1 onion (diced)
5 cloves garlic (minced)
20 grams parsley (chopped)
10 grams mint leaves (chopped)
4 tablespoons olive oil
½ teaspoon cumin
1 and ½ teaspoon baharat seasoning
1 tablespoon salt
2 litres water or vegetable stock
3 tablespoons tomato paste
1 clove garlic (minced)
2 bay leaves
6 mint leaves (fresh or dried)

Steps:

  • Cut the stems off and hollow out the centres of the aubergines to make room for the stuffing. To do that, you will need a special courgette or zucchini corer to get rid of the flesh.Leave about 1/2 inch of rim of aubergine and make sure not to make any holes.
  • Start by pouring warm water over rice, and leave aside for it to soften a little.
  • Dice onion, tomatoes, and mince some garlic. Roughly chop parsley and fresh mint leaves.
  • Mix all of the ingredients together with olive oil, salt, cumin, baharat mix and black pepper. Add the rice and mix. Your stuffing is now ready.
  • Stuff the eggplants with the rice veggie stuffing, but make sure that the rice takes only two thirds of the space in the aubergine and is loose as the rice will expand while cooking and can become a bit messy and aubergines might even break.
  • Arrange the stuffed aubergines/eggplants in a pot. Then add water or vegetable stock and cook for 15 minutes.
  • Add tomato paste or blended tomatoes with garlic, 2 bay leaves and a few mint leaves (fresh or dried). Cook on medium heat for around 40 minutes or until the rice is soft.Cover with a plate to help the aubergines stay in place, you could also place a mug on top if the plates starts to move.
  • Cook for about 40 minutes, or until the aubergines are cooked and soft. While the aubergines are being cooked, try the sauce and see if it needs more salt. Add more salt to taste.
  • Serve warm in a plate or bowl with some extra tomato sauce from the pot. Eat with yogurt or pita bread.

EGGPLANT (AUBERGINE) PATTIES OR EGGPLANT FRITTERS

Eggplant (Aubergine) Patties or Eggplant Fritters image

A quick and easy side dish or appetizer, and an alternative to fried eggplant strips. Could easily be made into a "parmigiana" verison with a bit of sauce and some good mozzarella cheese.

Provided by DeSouter

Categories     Vegetable

Time 20m

Yield 10 fritters

Number Of Ingredients 9

2 large eggplants
1 cup breadcrumbs
1/2-3/4 cup of good quality parmesan cheese or 1/2-3/4 cup pecorino romano cheese
2 eggs, beaten
1 teaspoon garlic salt
1 teaspoon oregano, rubbed between palms
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil

Steps:

  • Cut ends off of eggplants, cut in half length-wise and then into five pieces, length-wise.
  • Cut across into 3/4" chunks.
  • Steam eggplant chunks for 10 minutes and cool slightly.
  • Heat oil in a large frying pan - you may mix vegetable and olive oil instead of using just olive oil.
  • Squeeze liquid out of steamed pieces with your hands, keeping pieces from getting too mashed.
  • Place bread crumbs (seasoned or unseasoned), parmesan cheese and seasonings into a large bowl and mix.
  • You could use a clove or two of fresh garlic, sauteed in place of the garlic salt.
  • Beat eggs in a small bowl and add to bread crumb mix along with eggplant pieces.
  • Stir to mix well.
  • Form patties of any size, but not exceeding an inch in thickness and place in frying pan.
  • Cook for five minutes on each side.
  • Remove to a towel-lined plate to drain.
  • Place in a warm oven if you are not ready to serve them immediately.

Tips:

  • Choose the right eggplant: For the best results, select eggplants that are firm, heavy for their size, and have smooth, unblemished skin. Avoid eggplants that have wrinkles, bruises, or soft spots.
  • Prepare the eggplant properly: To remove the bitterness from the eggplant, you can either salt it or roast it. Salting involves sprinkling salt on the eggplant slices and letting them sit for 30 minutes before rinsing and patting dry. Roasting involves brushing the eggplant slices with olive oil and roasting them in a preheated oven until tender.
  • Use a variety of ingredients: Feel free to experiment with different ingredients in your eggplant dressing. Some popular additions include tomatoes, onions, garlic, herbs, and spices.
  • Adjust the flavors to your liking: The amount of lemon juice, olive oil, salt, and pepper you add to your dressing is a matter of personal preference. Taste the dressing as you make it and adjust the seasonings until you reach the desired flavor.

Conclusion:

Eggplant dressing is a versatile and flavorful condiment that can be used to enhance a variety of dishes. Whether you're drizzling it over grilled vegetables, tossing it with pasta, or using it as a dipping sauce, eggplant dressing is sure to add a touch of Mediterranean flair to your meal. So next time you're looking for a new way to enjoy eggplant, give one of these recipes a try!
