EASY TOMATO BALSAMIC VINAIGRETTE
I can't take credit for this recipe. A friend of mine who is a chef gave me this and I love it. Serve over grilled vegetables, fish and of course your favorite salad greens. One note, using a tube of the "double-concentrated" tomato paste really does make a big difference, as well as using an aged Balsamic. But I have made it with every day Balsamic and "standard" tomato paste and it still is pretty tasty. I think the rice vinegar is very important to use, and shouldn't be substituted in this recipe.

Tips:
- Use ripe, juicy tomatoes: The quality of your tomatoes will greatly impact the flavor of your vinaigrette. Choose tomatoes that are in season and have a deep red color.
- Choose a good quality balsamic vinegar: Balsamic vinegar can range in price from a few dollars to hundreds of dollars. For a simple vinaigrette, you don't need to spend a lot of money, but choose a vinegar that has a rich, complex flavor.
- Use fresh herbs: Fresh herbs add a bright, aromatic flavor to your vinaigrette. Basil, oregano, and thyme are all good choices.
- Season to taste: Always taste your vinaigrette before serving and adjust the seasonings accordingly. You may want to add more salt, pepper, or vinegar to suit your taste.
- Store your vinaigrette in a jar or bottle with a tight-fitting lid: Your vinaigrette will keep in the refrigerator for up to two weeks.
Conclusion:
Easy Tomato Balsamic Vinaigrette is a versatile dressing that can be used on salads, vegetables, and grilled meats. It's also a great way to add flavor to sandwiches and wraps. With just a few simple ingredients and a few minutes of your time, you can make a delicious and healthy vinaigrette that will brighten up any meal.
