2 eggs
2/3 cup sugar plus 1 tablespoon for dusting
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup milk
1/2 pint fresh strawberries, hulled and diced

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Spray a loaf pan with nonstick spray.
  • In a large bowl or stand mixer (affiliate link), combine eggs, 2/3 cup sugar, vegetable oil, and vanilla and beat on medium speed until fully blended.

3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg plus 3 egg whites, lightly beaten
1-1/4 cups vegetable oil
2 cups chopped fresh or frozen strawberries
1-1/2 cups chopped walnuts

Steps:

  • In a large bowl, combine flour, baking soda, sugar, cinnamon and salt. Add egg, egg whites and oil; stir just until moistened. Fold in strawberries and nuts.
