Time 30m

Yield 4-5 dozen

Number Of Ingredients 7

1 (18 1/2 ounce) box spice cake mix
1 (15 ounce) can pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup confectioners' sugar
1 tablespoon milk
1/2 tablespoon vanilla extract

Steps:

  • Mix cake mix, pumpkin puree, and seasonings until well blended.
  • Drop by spoonfuls onto an ungreased cookie sheet, flattening slightly.
  • Bake at 350° for 25 minutes.
  • Let cool for 5 minutes, then remove to a baking rack to finish cooling.
  • Combine Icing ingredients, and drizzle over the top of the cooled cookies.

Tips:

  • Prep Ahead: Make the dough and chill it overnight for a deeper flavor and easier handling.
  • Creaming Butter and Sugar: Creaming butter and sugar until light and fluffy is essential for creating air pockets that result in soft and chewy cookies.
  • Measuring Flour: Use the spoon-and-level method to measure flour accurately. Dip a spoon into the flour container and gently scoop it into the measuring cup. Level it off with a knife or straight edge.
  • Chilling the Dough: Chilling the dough firms it up, making it less sticky and easier to roll out. This also helps prevent the cookies from spreading too much in the oven.
  • Rolling Out the Dough: Use a lightly floured surface and a rolling pin to roll out the dough evenly. Roll it to a thickness of about 1/8 inch.
  • Cutting the Cookies: Use cookie cutters of your choice to cut out the cookies. Make sure to press straight down to avoid distorting the shapes.
  • Baking the Cookies: Preheat the oven to the specified temperature before baking. Bake the cookies until the edges are just beginning to brown and the centers are set.
  • Cooling the Cookies: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
