Vietnamese Tamarind Pork Stir-Fry image

This is a recipe I found in my "The Complete Meat Cookbook" by Bruce Aidells and Denis Kelly, posting (untried by me) for the ZWT event.

Provided by diner524

Categories     Pork

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 teaspoon tamarind paste
1 teaspoon sugar
1 tablespoon fish sauce
1 teaspoon minced garlic
1 tablespoon chopped shallot (or green onions)
1 whole anchovy fillet, mashed to a paste
1 teaspoon fresh ginger, minced
1 1/2 lbs boneless pork loin, cut into 1/4-inch-thick matchsticks
1 tablespoon peanut oil
1 medium red bell pepper, cut into 1-inch squares
2 tablespoons fish sauce
8 green onions, cut into 2-inch pieces
1/2 cup fresh pineapple, diced (or canned)
2 tablespoons chopped of fresh mint, for garnish

Steps:

  • Flavor Step - Mix all the marinade ingredients together in a bowl and toss the pork strips in the marinade until they are well coated. Marinate for 30 minutes at room temperature.
  • Heat 1-1/2 teaspoons of the oil in a wok or heavy skillet over the highest heat. Stir-fry the red bell peppers for 2 minutes. Remove and set aside.
  • Remove the meat from the marinade, saving the marinade.

  • Add the reserved marinade, the fish sauce, green onions or scallions, pineapple, and the peppers and cook, stirring often, until most of the liquid has evaporated and the sauce coats the pork, 1 to 2 minutes.
  • Spoon the meat and sauce into a bowl, sprinkle with the chopped mint, and serve.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will greatly impact the taste of your stir-fry. Make sure to use fresh, high-quality pork, vegetables, and sauces.
  • Cut your vegetables and meat evenly: This will help them cook evenly and prevent some pieces from being overcooked while others are still raw.
  • Use a well-seasoned wok or skillet: A well-seasoned wok or skillet will help prevent the food from sticking and will also add flavor to the dish.
  • Stir-fry the food over high heat: Stir-frying is a quick-cooking method, so it's important to use high heat to quickly cook the food without overcooking it.
  • Don't overcrowd the pan: If you overcrowd the pan, the food will not cook evenly and will end up steamed instead of stir-fried.
  • Add the sauce at the end: Adding the sauce at the end will help prevent it from burning and will also allow the flavors to meld together.

Conclusion:

Making an easy sesame and tamarind pork stir-fry is a great way to enjoy a delicious and healthy meal. With just a few simple ingredients and a little bit of time, you can have a delicious stir-fry that the whole family will enjoy. So next time you're looking for a quick and easy weeknight meal, give this sesame and tamarind pork stir-fry a try. You won't be disappointed!
