1 -2 cucumber, peeled,and sliced-i prefer hothouse,they have less seeds
1 container cream cheese with chives

Steps:

  • Simply cut circles of white bread with a biscuit cutter.
  • You can use whatever size you like.
  • I prefer my bread to be the same size as the cucumber.
  • Spread the bread with some cream cheese.
  • Top with a slices of thin or thick cucumber.
  • These are open faced sandwiches.
  • Enjoy!

sliced wine-soaked cheddar, or swiss cheese
dried cranberries/craisins
crusty sourdough bread

Steps:

  • 1. Toast sourdough slices.
  • 2. Top with cheese slices and dried cranberries. Can top with another slice of bread to make sandwich, or leave open-faced.
  • 3. Microwave to melt cheese. (Could skip toasting and grill, if you prefer.) Cut & serve as appetizer or with soup/salad for a meal.

When I lived in North Carolina everyone made these with sliced ham and small party rolls. I used pepperoni,ham and chicken with a cheese roll.You may use whatever meat filling you enjoy.

1 c butter,softened
3 Tbsp poppy seeds
1 onion,grated
1 Tbsp worcestershire sauce
2 Tbsp prepared dijon style mustard
2-12 oz packages white party rolls
1/2 lb chopped cooked ham,chicken & pepperoni
5 oz swiss cheese

Steps:

  • 1. Preheat oven to 350 degrees F
  • 2. In a food processor, mix together butter, poppy seeds, onion, Worcestershire sauce and Dijon mustard
  • 3. Slice rolls in half horizontally and set aside tops. Spread bottoms with the butter mixture. Top with meat mixtue and Swiss cheese. Replace tops.
  • 4. Arrange rolls in a single layer in a medium baking pan.Bake in the preheated oven 10-12 minutes until rolls are lightly browned and cheese is melted.
