This recipe was my grandmothers,my mother made this one-egg cake when we were little. This cake was made only when one of her (11)children had a birthday. It made us feel special, being just like all the other kids. I make this cake, because its easy and quick to make. Enjoy!

2 c cake flour
2 tsp baking powder
1/4 tsp salt
4 Tbsp butter or other shortening
1 c sugar
1 egg unbeaten
3/4 c milk
1 tsp vanilla
cake frosting, any flavor is great with this cake i like white frosting with coconut

Steps:

  • 1. Add flour,baking powder, and salt mix together in bowl. In another bowl mix together butter,add sugar, gradually cream together until blended and light.Add egg and mix.
  • 2. Now add flour small amounts at a time with milk into creamy mixture once blended add vanilla.
  • 3. Bake in two greased 8-inch layer pans,in moderate oven (375`F.)25 minutes,or until done

2 teaspoons vanilla extract

this is the an easy cake ,when your in a hurry.i use it to make a pineapple udpside down cake,its not to sweet.or you can just frost it,it makes a small cake.this is perfect for a couple of single people.

  • 1. mix all this together,i use a whisk.and pour into a greased round pan,it only makes one layer,its a very basic cake.you can frost this,or i take a can of crushed pineapple,and drain it well,then put it first in the pan,and then some brown sugar and melted butter on that,and then pour the cake over it,and bake .when done ,invert on a plate.and serve with whip cream,this is perfect for 2 people,or a single person.
