2 1/2 cups cooked chicken
2 (10 ounce) cans cream of mushroom soup
1 (8 ounce) can sliced water chestnuts, drained
1 1/2 cups canned mushrooms, drained
2 small celery ribs, finely chopped
3/4 cup mayonnaise
1/4 cup grated parmesan cheese (or to taste)
1 small onion, finely chopped
1 tablespoon lemon juice
salt and pepper
1 pinch cayenne (optional or to taste)
1/3 cup grated parmesan cheese (or to taste)
shredded cheddar cheese (or use crushed cornflakes)

Steps:

  • Set oven to 350 degrees.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1 medium red onion, chopped
8 ounces fresh mushrooms, quartered
1 -1 1/2 cup chicken broth

1/2 cup sour cream

  • In large non-stick fry pan, melt butter over high heat.

2 Tbsp coconut oil or oil of your choice
1 lb skinless, boneless chicken thighs
1 large onion, chunked
2 tsp chopped garlic
1 1/2 c celery, chopped
1 c carrot, chunked
2 c chicken stock
1/2 c salsa, chunky or chopped tomatoes
few dash(es) hot pepper sauce (optional)
2 tsp salt
black pepper - a few grinds
1 bay leaf
1 tsp parsley flakes
1/2 tsp Herbes de provence
3 c sliced mushrooms
1 Tbsp lemon juice
1/2 c frozen green peas

Steps:

  • 1. Cut the chicken thighs into about 1-inch chunks (or whatever size you want).
  • 2. Put 2 Tbsp coconut oil in large pot and add the onions. Sweat the onions for a few minutes - be careful not to brown. Add garlic.
  • 3. Add chicken thighs and stir into the onion mixture. Allow to cook for about 5 minutes. Then add the rest of the vegetables except for mushrooms and peas. Season with a couple of teaspoons of salt and a few grinds of pepper.
  • 4. Add chicken stock or 2 c water plus 2 teaspoons Better Than Bouillon. Stir in the salsa, herbs and hot sauce, and simmer - partly covered - for 30 minutes.
  • 5. Add mushrooms and lemon juice and simmer another 10 minutes. Then add the green peas, cover and simmer another 5 minutes. Taste for seasoning, thicken the sauce with a flour/water slurry if you like (I didn't).
  • 6. Serve or refrigerate and reheat later. This gives the flavours a chance to mingle. Freeze leftovers - if any.

1 egg
1 cup crushed Ritz cracker
3/4 teaspoon salt
1/2 lb mushroom, sliced
2 tablespoons butter, divided
4 slices deli ham, thinly sliced
4 slices swiss cheese

Steps:

  • Flatten chicken to 1/4 in thickness. In a shallow bowl lightly beat the egg. Combine cracker crumbs and salt in another bowl. Dip chicken in egg then roll in crumbs. Set aside.
  • In a large skillet, saute mushrooms in 1 tablespoon butter. Remove and set aside. In the same skillet, cook chicken on each side in remaining butter until done.

6 slices ham (I use old fashioned or honey)
6 slices swiss cheese
1 (10 1/2 ounce) can mushroom soup (I really like Campbell's Golden Mushroom)
2 cups sour cream
1 cup fresh sliced mushrooms

Steps:

  • Use a meat pounder to flatten the chicken breats. Place 1 slice of ham and 1 slice of cheese in the center of each breast. Roll up and place seam side down in a casserole dish. Securing with a toothpick if necessary. Bake, covered, for 20 minutes at 350 degrees or until the chicken is no longer pink and juices run clear. While it is baking, mix together remaining ingredients. Pour over cooked chicken and bake until sauce bubbles. I usually serve this over egg noodles

500 g chicken breasts, all visible fat removed
150 g mushrooms
1 small leek
1/4 cup finely sliced shallots or 1/4 cup spring onion
1/3 cup extra light sour cream
190 g phyllo pastry, sheets thawed
1 tablespoon coarse grain mustard
1 teaspoon olive oil
1 pinch salt, to taste
pepper, to taste
canola oil cooking spray
dried herbs (optional)

Steps:

  • Thinly slice chicken breasts and lightly brown in a wok/ pan, using a little olive oil.
  • Add thinly sliced mushrooms and leeks to pan, cook until just softened (only about 1 1/2 minutes).
  • Add extra-light sour cream, shallots, mustard, salt and pepper, cook until combined (about 1 minute). Set aside.
  • Using 2 phyllo pastry sheets per pastry, place 1/6 of the mixture in centre and gently fold.
  • How you fold is up to you- -I recommend folding sheets in half first to prevent tearing.
  • Place folded parcels on baking paper-lined oven dish, and lightly spray with canola oil.
  • Sprinkle with mixed herbs.
  • Bake in moderate oven (180°C) for 10-15 minutes, or until pastry is crisp and chicken mixture heated.
  • To brown pastry, remove from oven and place under grill for about 1 minute.
  • Watch them though, they brown very quickly!
  • Serve with a side of green salad or veggies.

1 onion, chopped
1 pound fresh mushrooms, sliced

1 pound small shell pasta
1 (10.75 ounce) can condensed cream of mushroom soup
