EASY MAPLE MASHED SWEET POTATOES
The addition of maple syrup makes these pleasently different. This dish was always popular when I catered holiday dinners. I put a small amount of syrup here but you may certainly add more if you like. I have also cut it down as I doubt that very many folks will be having 100 at their table *wink*. Prep time is actually the mixing time after the potatoes have been baked. Also this can be made the day before and gently reheated (covered) before serving. **EDIT** After several reviewers commenting that the maple flavor is faint I have upped the maple syrup content on Jan 18 "07, please feel free to add more after tasting it if you would like to.

Tips:
- Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with smooth skin. Avoid any that are soft, bruised, or have blemishes.
- Scrub the sweet potatoes thoroughly before cooking: This will help to remove any dirt or debris from the skin.
- Cook the sweet potatoes until they are tender: This can be done by boiling, baking, or steaming. Boiling is the quickest method, but baking or steaming will give you more flavorful results.
- Peel the sweet potatoes while they are still warm: This will be much easier than trying to peel them once they have cooled.
- Mash the sweet potatoes with a potato masher or food processor: Be sure to mash them until they are smooth and creamy.
- Season the mashed sweet potatoes to taste: You can add salt, pepper, butter, maple syrup, brown sugar, cinnamon, nutmeg, or any other desired seasonings.
- Serve the mashed sweet potatoes immediately: They can be enjoyed on their own or as a side dish with roasted chicken, turkey, or ham.
