EASY ITALIAN SAUSAGE AND PEPPERS
My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

Tips:
- Choose the Right Sausage: Opt for high-quality Italian sausage with a good balance of spices and flavors. You can use sweet, hot, or mild sausage depending on your preference.
- Slice Peppers Evenly: Ensure that the bell peppers are cut into uniform slices to promote even cooking. This will help them cook evenly and look visually appealing.
- Sauté the Peppers First: Before adding the sausage, sauté the peppers in olive oil until they begin to soften. This step intensifies their flavor and helps them caramelize, adding depth to the dish.
- Brown the Sausage Properly: Cook the sausage over medium heat, stirring occasionally, until it's nicely browned. This step adds color and enhances the sausage's flavor.
- Deglaze the Pan: After removing the sausage and peppers from the pan, deglaze it with white wine or vegetable broth. This helps dissolve any browned bits and adds more flavor to the dish.
- Simmer for Flavor: Once the wine or broth has been added, let the sausage and peppers simmer for a few minutes to allow the flavors to meld together and develop fully.
- Season to Taste: Before serving, taste the dish and adjust the seasoning if needed. You may want to add more salt, pepper, or other herbs and spices to suit your taste.
- Garnish Before Serving: Enhance the presentation by garnishing the dish with fresh parsley or basil. This adds a pop of color and freshness to the dish.
