Yield 4 servings

Number Of Ingredients 9

Nonstick vegetable oil spray
4 5-ounce albacore tuna steaks (from the U.S. or Canada; about 1 inch thick)
2 zucchini, quartered lengthwise
1 eggplant (about 1 pound), cut lengthwise into 3/4-inch-thick slices
4 tablespoons (about) olive oil
2 cups assorted cherry tomatoes, halved
2 teaspoons herbes de Provence*
1 garlic clove, minced
Easy Aioli

Steps:

  • Spray grill with nonstick spray. Prepare barbecue (medium-high heat).
  • Brush tuna steaks, zucchini, and eggplant with olive oil; sprinkle with salt and pepper. Grill vegetables until tender and lightly charred, turning occasionally, about 12 minutes. Remove from grill and cut into bite-size chunks. Place vegetables, tomatoes, herbes de Provence, and garlic in large bowl; toss to blend. Set aside. Grill tuna steaks to desired doneness, about 4 minutes per side for medium-rare. Place tuna on plates, top with vegetables, and serve with aioli. * A dried herb mixture; sold in the spice section of supermarkets and at specialty foods stores. If unavailable, a combination of dried thyme, basil, savory, and fennel seeds can be substituted.

Tips:

  • Choose the Right Cut of Tuna: Opt for a thick, firm cut of tuna steak, such as ahi or yellowfin. This will ensure a juicy and flavorful result.
  • Prepare the Marinade: The marinade not only adds flavor but also helps tenderize the tuna. Use a mixture of olive oil, soy sauce, ginger, garlic, and sesame seeds for an Asian-inspired flavor. Alternatively, try a marinade made with lemon juice, herbs like thyme or oregano, and a touch of honey for a Mediterranean twist.
  • Marinate for at Least 30 Minutes: Allow the tuna steaks to soak up the marinade for at least 30 minutes, or up to overnight. This will allow the flavors to penetrate the fish and enhance its taste.
  • Grill Over Medium-High Heat: Preheat your grill to medium-high heat before cooking the tuna. This will help sear the exterior while leaving the inside tender and moist.
  • Cook for 4-5 Minutes Per Side: Depending on the thickness of your tuna steaks, grill them for 4-5 minutes per side. This will result in a medium-rare to medium cook, which is ideal for tuna. If you prefer a more well-done steak, cook for an additional minute or two per side.
  • Use a Fish Spatula: To avoid breaking the delicate flesh of the tuna, use a fish spatula to flip and handle the steaks during grilling.
  • Let it Rest: Once the tuna steaks are cooked, let them rest for a few minutes before serving. This allows the juices to redistribute throughout the fish, resulting in a more tender and flavorful bite.

Conclusion:

Grilling tuna is a quick and easy way to enjoy this delicious and versatile fish. With the right marinade, grilling technique, and a few simple tips, you can create a flavorful and satisfying meal that's perfect for any occasion. Whether you prefer a classic Asian marinade or a Mediterranean-inspired herb blend, experimenting with different flavors and cooking methods will help you discover your favorite grilled tuna recipe.
