2 pounds fresh green beans, trimmed
½ cup balsamic vinegar
⅓ cup extra-virgin olive oil
1 small sweet onion, thinly sliced
1 clove garlic, minced
2 teaspoons chopped fresh parsley
1 teaspoon white sugar
1 teaspoon salt
freshly ground black pepper to taste

Steps:

  • Bring a large pot with lightly salted water to a boil over high heat. Add beans and cook, uncovered, until soft but still firm to the bite, 7 to 10 minutes. Check often so beans don't overcook.
  • Combine vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper in a large bowl.

This is a version of a recipe my mother-in-law taught me to make. It is a family favorite. It is an entire meal in one pan! You can prepare the chicken any way that is convenient for you. Prep time does not include cooking chicken.

1 cup seasoned stuffing mix (favorites are Pepperidge Farms herb or cornbread)
2 cups cooked chicken (I do mine in a slow cooker)
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can chicken broth
1 (8 ounce) container sour cream
1 (14 1/2 ounce) can French style green beans (drained)
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 teaspoon onion powder
1 -2 cup seasoned stuffing mix
1/2 cup margarine (optionl)

Steps:

  • Heat oven to 350 degrees.
  • Combine ingredients and put in greased 9 x 13 baking dish. Cover with more stuffing mix and margarine, if desired.
  • Bake for 20-25 minutes until bubbly.

A handy little recipe that I adapted from a pretty generic looking Mexican cookbook that I have. The original recipe calls for feta cheese, so that's an option if you eat dairy. I think it's a great dish without the cheese but also plan to incorporate Recipe #364732 into it next time. Great way to use fresh beans from your garden, they are the star of the dish!

3/4 lb fresh green beans, topped and tailed
2 tablespoons red wine vinegar (or sub your favourite fruit vinegar)
1/2 cup extra virgin olive oil
2 teaspoons Dijon mustard
1 fresh garlic clove (optional)
1/2 red onion, diced
3 tablespoons fresh cilantro, chopped
2 red radishes, thinly sliced
1 teaspoon fresh oregano, chopped well (or sub 1/2 tsp dried)
1 cup cherry tomatoes, quartered (or halved)
sea salt
black pepper

Steps:

  • Bring about 2 inches of water to boil in the bottom of a steamer. Add the beans to the top part, cover and let steam until tender but still firm (about 4-5 minutes). You really want to retain their crispness. Drain and rinse under cold water to stop the cooking process. You could also dunk them into a ice water bath. Drain well and pat dry.
  • While the beans cook, whisk together the vinegar, olive oil, mustard and garlic and season to taste with S&P. (If using feta you likely won't want any salt).
  • Place the cooled beans into a bowl with the onions, cilantro, radish slices, oregano and toss together with the dressing. Adjust seasoning.
  • Transfer to a serving platter. Surround the beans with the tomato wedges for garnish. Chill until ready to serve.

This is a very easy dish I made by throwing together ingredients I had lying around the house. It can be jazzed up by replacing the cheddar with pepper jack cheese. I also like to boil pickled jalepenos with my potatoes to infuse them with spice. This makes a great side dish or make it a meal by adding ground turkey or chicken.

5 -6 medium potatoes
1 (10 ounce) can cream of chicken soup
3/4 cup milk
1 (14 ounce) can cut green beans
1 cup cheddar cheese, shredded
8 ounces Velveeta cheese, cubed

  • Preheat oven to 350 degrees Fahrenheit.
  • Peel and dice potatoes.
  • Boil potatoes until not quite done (about 8 minutes).
  • In a round casserole dish, combine cream of chicken soup and milk.
  • Stir with fork until a soup-like consistency.
  • Fold in green beans, Cheddar cheese, Velveeta cheese, and salt and pepper.
  • Drain potatoes.
  • Fold potatoes into the casserole dish.

1 Tbs olive oil
1 lb hot Italian sausage
1 small yellow onion
3 cups water
1- 12 oz box quick cook or "pronto" penne pasta (the kind of pasta you do not have to boil or strain)
2 cups fresh snipped green beans (I used French green beans)
1- 24 ounce jar Bertolli Tomato and Basil pasta sauce
2-3 cups Mozzarella cheese shreds (How cheesy do you want it?)
Garnish
Fresh parsley, chopped fine

Steps:

  • Preheat oven to Broil on High. Heat olive oil in a deep skillet, and brown your sausage over a medium high heat. Add in onion, and saute until fragrant, about a minute. Pour 3 cups of water over the top, add in snipped green beans and quick cook pasta, turn heat to high. Set timer, and cook for 10 minutes. At the end of 10 minutes, pour Bertolli sauce over the top, and stir in. Let simmer 2-3 more minutes. Top with cheese, and put in in the oven to broil until cheese is melted and bubbly. Garnish with fresh parsley and serve. NOTES If you can't find the Pronto or quick cook pasta, then just cook your pasta according to package directions, and remove water from the ingredient list. Instead, sautee green beans with the sausage and onion and move on to step 6 in the directions.
