2 1/4 teaspoons baking powder
3/4 teaspoon salt

4 large eggs ((about 8 ounces out of shell; 226 grams))

Tips:

  • Gluten-free flour blends: Make sure to use a high-quality gluten-free flour blend that contains a variety of flours, such as almond flour, coconut flour, and tapioca flour. This will ensure that your cake has a good texture and flavor.
  • Baking powder and baking soda: Both baking powder and baking soda are essential for making a light and fluffy cake. Make sure to use fresh baking powder and baking soda, as old or expired ingredients can result in a flat or dense cake.
  • Eggs: Eggs provide structure and moisture to the cake. If you are vegan, you can substitute flax eggs or chia eggs for the eggs in this recipe.
  • Butter or oil: Butter or oil adds richness and flavor to the cake. If you are using butter, make sure to soften it to room temperature before creaming it with the sugar.
  • Milk: Milk adds moisture and flavor to the cake. You can use any type of milk you like, including dairy milk, almond milk, or coconut milk.
  • Lemon zest: Lemon zest adds a bright and citrusy flavor to the cake. If you don't have lemon zest on hand, you can substitute orange zest or lime zest.
  • Vanilla extract: Vanilla extract adds a warm and sweet flavor to the cake. If you don't have vanilla extract, you can substitute almond extract or coconut extract.
  • Salt: Salt helps to balance the sweetness of the cake and enhances the other flavors. Don't skip the salt in this recipe!

Conclusion:

This gluten-free yellow birthday cake is a delicious and festive dessert that is perfect for any occasion. It is easy to make and can be decorated with your favorite frosting, sprinkles, or other decorations. Whether you are gluten-free or not, you will love this cake!
