This is NOTHING like canned creamed corn! My husband is not a fan of corn or creamed dishes, but he thinks this is great. Easy and quick to prepare and is an especially delicious side dish for chicken or pork. Everyone always asks for the recipe.

Time 45m

Yield 5-6 serving(s)

Number Of Ingredients 4

16 cups raw corn, cut from cob
1 cup sugar
1 quart water
4 teaspoons salt

Steps:

  • Mix all ingredients together.
  • Bring to boil.
  • Reduce heat.
  • Let simmer 15 minute.
  • Remove from heat.
  • Let cool overnight to absorb liquid.
  • Box or bag.
  • Label.
  • Freeze.

Tips:

  • Choose Fresh Corn: Select fresh, sweet corn on the cob for the best flavor and texture.
  • Prepare the Corn: Remove the husks and silk from the corn cobs. If desired, cut the kernels off the cob using a sharp knife.
  • Blanch the Corn: Blanching the corn helps preserve its color, flavor, and nutrients. Bring a large pot of water to a boil and add the corn. Cook for 2-3 minutes, then immediately transfer the corn to an ice bath to stop the cooking process.
  • Drain and Dry the Corn: Drain the corn well and pat it dry with a clean kitchen towel. This will help prevent the corn from becoming watery when frozen.
  • Freeze the Corn: Spread the corn kernels in a single layer on a baking sheet and freeze for 1-2 hours. This will help prevent the kernels from sticking together. Once frozen, transfer the corn to airtight freezer-safe bags or containers.
  • Use Frozen Corn: Frozen corn can be used in a variety of dishes. Add it to soups, stews, stir-fries, casseroles, and salads. You can also use it to make cornbread, corn pudding, and other corn-based dishes.

Conclusion:

Freezing corn is a great way to preserve its freshness and flavor for later use. By following these tips, you can easily freeze corn at home and enjoy it all year long. Frozen corn is a versatile ingredient that can be used in a variety of dishes, making it a great addition to any kitchen.
