Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and avoid scrambling during the cooking process.
  • Choose the right pork: For this recipe, it's best to use a lean cut of pork, such as pork tenderloin or pork loin. These cuts will cook quickly and evenly.
  • Marinate the pork: Marinating the pork in a mixture of soy sauce, rice wine, and Chinese spices helps to tenderize the meat and infuse it with flavor.
  • Cook the pork in small batches: To prevent the pork from overcrowding the pan and steaming instead of searing, cook it in small batches.
  • Use a well-seasoned wok: A well-seasoned wok helps to prevent the food from sticking and ensures even cooking.
  • Add the vegetables in stages: Add the vegetables to the wok in stages, starting with the vegetables that take longer to cook, such as carrots and celery.
  • Use a cornstarch slurry to thicken the sauce: A cornstarch slurry is a mixture of cornstarch and water that is used to thicken the sauce. Add the cornstarch slurry to the wok towards the end of cooking, stirring constantly until the sauce has thickened.
