EASY CROCK POT MOROCCAN CHICKEN, CHICKPEA AND APRICOT TAGINE

Easy Crock Pot Moroccan Chicken, Chickpea and Apricot Tagine image

This is one of my family's favourite recipes; I am constantly asked all the time to make it. I was taught it by a Moroccan friend who also lives in France - it is an old family recipe passed down for many years. It is great all year around - served with flat breads or pitta breads & assorted salads in spring & summer or served with hot fluffy & fruity couscous, assorted chutneys or pickles in the depths of winter. I make mine in a fantastic "Electric Tagine" made by Tefal; it of course works in a more traditional clay tagine - BUT the real secret is.......it works like a dream in a Slow cooker/Crock Pot. Try it out! If you cannot get Ras-el-Hanout, which is an exotic Moroccan spice mixture, including rose petals - don't worry, use the other spices I have listed instead; or I have a Ras-el-Hanout recipe posted on Recipezaar: Recipe #205185 N.B. I notice in a review that it has been suggested that Chemical Heat is needed!! The great thing about sharing recipes is that they can be adapted to personal taste. BUT, this is not supposed to be a "Hot" recipe, but a "Fragrant & Fruity" recipe!! A Tagine by definition is SLOW cooked over a LOW heat & is very fruity with subtle undertones of heat! However, life would be boring if you couldn't add a bit of "heat", but it's just not traditional. What is traditional, is to allow your guests to add their own heat, so have a bowl of "Harissa" on the table. Preserved lemons are also a wonderful and traditional addition - I have a recipe posted on Recipezaar: Recipe #209590 PLEASE NOTE: This recipe lists canned chickpeas in the ingredients, NOT dried! If you use dried chickpeas, you MUST soak them and cook them first!

Categories     One Dish Meal

Time 3h30m

Yield 6 serving(s)

Number Of Ingredients 23

6 large boneless skinless chicken breasts, chopped into large chunks (or assorted chicken pieces, about 3 lbs)
1 tablespoon flour or 2 tablespoons cornflour
2 large onions, chopped
3 -4 garlic cloves, chopped finely
1 -2 tablespoon extra virgin olive oil
1 inch fresh gingerroot, finely chopped
6 ounces dried apricots
2 tablespoons tomato paste
2 (14 ounce) cans chopped tomatoes
2 (14 ounce) cans chickpeas
3 tablespoons honey
1/2 pint chicken stock
1 pinch saffron or 1 teaspoon turmeric
4 teaspoons ras el hanout spice mix (or make up spice mix below)
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon cayenne pepper (optional)
salt and black pepper
chopped fresh coriander, to serve (Cilantro)
2 carrots, peeled & diced (optional)
1 preserved lemon, chopped into small wedges (optional)
harissa

Steps:

  • PLEASE NOTE: This recipe lists canned chickpeas in the ingredients, NOT dried! If you use dried chickpeas, you MUST soak them and cook them first!
  • Heat up olive oil in a frying pan/skillet & saute chopped onions & garlic for 5-10 minutes.
  • Add chicken stock & gradually mix in flour or cornflour until well mixed & not lumpy.Add honey & tomato paste & mix well.
  • Add herbs, spices & finely chopped ginger with salt & pepper to taste.
  • Finally add tinned tomatoes & mix well.
  • Pour the above tomato, onion & spice mix into slow cooker or tagine.
  • Add chicken & chickpeas & mix well.
  • Add dried apricots making sure they are covered by juice. (Add the carrots if using.).
  • Give it a gentle but good stir to mix everything together well.
  • Crock Pot or Slow Cooker - Cook on high for about 3 to 4 hours OR automatic with keep warm facility for up to 8 hours. (Please note that the cooking times depend on your crockpot, the cooking times I have suggested work fine with mine which is a Morphy Richards Slow Cooker.).
  • If cooking in a Traditional Tagine, do as above & cook SLOWLY over gas or barbeque for about 2-3 hours.
  • Electric Tagine cooking - same as the slowcooker. If you need to thicken it up towards the end of the cooking time, add cornflour which has been mixed with a little water & add to the tagine - mix well.
  • Serve with freshly chopped Coriander/Cilantro sprinked on top & either with couscous, rice, fresh flat bread, pitta bread or salads. It is also good (if not traditional) served with fluffy pureed or mashed potatoes & pasta.
  • Note: You can use chicken pieces or whole chicken which has been cut up into portions, but you will then need to brown them in a frying pan or skillet beforehand. Preserved lemons make a great addition, add them when you add the apricots and carrots.

Time 6h5m

Yield 6 serving(s)

Number Of Ingredients 5

1 (3 lb) beef roast, of choice
1 cup water
1 (2/3 ounce) envelope Italian salad dressing mix
1 (1 ounce) envelope ranch dressing mix
1 (7/8 ounce) envelope brown gravy mix

Steps:

  • - Mix dry mixes thoroughly into water.
  • - Place beef in Crock Pot.
  • - Cover with gravy and place on lid.
  • - Cook on LOW for 6-8 hours until meat is easily pierced by fork.
  • - OPTIONAL: Add vegetables after first 3 hours of cooking to avoid them becoming too soft.
  • ENJOY!
  • NOTE: Because recipes need exacting amounts it was hard to list the envelope quantities. For clarity, my Italian Dressing envelope was 0.7 (19g) ounce size, My Ranch was 1 ounce (28g) size and my Beef Gravy mix was 0.87 (24g) size. These sizes worked perfectly for flavor and were not over-salty.

EASY CROCK POT BEEF STEW

Easy Crock Pot Beef Stew image

This beef stew has a tomato based sauce, giving it a little different flavor. Cooked it up one day and got rave reviews from my husband, who is not a stew fan usually. It's also very, very easy and low in calories. I put it in a calorie calculator and it's only about 100 calories per cup. I like to put it together the night before and put the whole crock in the fridge, then in the morning I just pop it into the warmer and let it go!

EASY CROCK POT BARBECUE ROAST (ONLY 5 INGREDIENTS!)

Easy Crock Pot Barbecue Roast (Only 5 Ingredients!) image

This is such an easy recipe. I usually throw it in the crock pot but I have made it in the oven as well. I serve it on noodles that I've boiled on the stove in the leftover "sauce". It's a good variation when you're sick of having a basic roast with gravy and mashed potatoes. I hope you like it!

Provided by Covelli

Categories     Roast Beef

Time 5h5m

Yield 4 serving(s)

Number Of Ingredients 5

2 -3 lbs roast (the cheapest cut will do fine)
1/4 cup of your favorite barbecue sauce
2 teaspoons chopped garlic (out of the jar is even ok)
1 ounce Lipton Onion Soup Mix (I use the whole package, I'm not sure of the precise measurement)
1/2 cup water (I'm guessing here, I really don't measure. Just cover the roast a little more than half way.)

Steps:

  • So easy -- just throw the barbecue sauce in a crock pot or in a dutch oven, along with the garlic and soup mix.
  • Place the roast in the crock pot or pan and add some water (you can brown the roast if you prefer but it's not needed if you're short on time).
  • Cook on low in the crock pot for about 8 hours or on high for 4-5 until it starts to fall apart.
  • I usually then take the roast out of the crock pot and pour the remaining liquid into a sauce pan, add a little water and throw some egg noodles into the pan and cook until they are cooked through.
  • *If you're going to cook the roast in the oven, I'd suggest cooking it at a low temp all day and I'd check the liquid periodically to make sure it doesn't dry out.

EASY CROCK POT TERIYAKI CHICKEN

Easy Crock Pot Teriyaki Chicken image

From the "Fix it and Forget It" cookbook of crockpot recipes. Turns out with little effort. We enjoy it served over rice, with a salad on the side. I also use jarred ground ginger and jarred minced garlic--comes out just as well. I often double the sauce ingredients that go on top of the chicken--if you like it with more sauce, I suggest you do this. I also use low-sodium soy sauce, otherwise it will be really salty.

Provided by AndreaVT96

Categories     Chicken Thigh & Leg

Time 13m

Yield 3-4 serving(s)

Number Of Ingredients 5

6 -8 skinless chicken thighs
1/2 cup low sodium soy sauce
2 tablespoons brown sugar
2 tablespoons grated fresh ginger
2 garlic cloves, minced

Steps:

  • Wash and dry chicken. Place in slow cooker.
  • Combine remaining ingredients. Pour over chicken.
  • Cover. Cook on high 1 hours Reduce heat to low, cook 6-7 hours. (Again, I wanted to start this in the morning and have it for dinner that evening, so I cooked it only on low for about 9 hrs and it turned out perfectly--fall off the bone tender. I think you can adjust times as you see fit.).

EASY CROCK POT PORK ROAST WITH CRANBERRIES

Easy Crock Pot Pork Roast With Cranberries image

This recipe comes from the Pillsbury's soup and Crock pot recipe book. If you want to you can brown the roast before placing into the slow cooker, I have left the onions as option they are good to add in, fresh minced garlic is another great addition

Provided by Kittencalrecipezazz

Categories     Pork

Time 7h5m

Yield 6 serving(s)

Number Of Ingredients 6

3 lbs boneless pork shoulder (trim off and excess fat)
1 small onion, thinly sliced (optional)
1 cup dried sweetened cranberries (or to taste)
1/2 cup chicken broth
1/2 cup cranberry juice cocktail
2 tablespoons cornstarch

Steps:

  • Sprinkle the sliced onions into a 4-quart crockpot.
  • Pace the roast on top of the onions.
  • In a bowl combine cranberries, broth and 1/4 cup the cranberry juice in a small bowl pour over the roast cover, and cook for 7-9 hours when done, place roast on platter.
  • Cover with foil to keep warm.
  • Pour the juices from crock pot into a medium-size saucepan.
  • Combine remaining 1/4 cup cranberry juice cocktail with the 2 tbsp of cornstarch in a small bowl; mix well add to the juices in the saucepan; cook and stir until thickened and bubbly (about 3 minutes).
  • Serve the sauce with pork roast.
  • **NOTE** if desired, the sauce can easily be doubled.

Tips:

  • Choose the right size slow cooker: Make sure your slow cooker is large enough to accommodate the ingredients without overcrowding. Overcrowding can prevent the food from cooking evenly.
  • Brown the meat before cooking: Browning the meat before adding it to the slow cooker helps to develop flavor and prevent it from becoming tough.
  • Use a variety of liquids: Don't just use water in your slow cooker. Try using broth, stock, or even wine to add flavor to the dish.
  • Add vegetables and herbs: Vegetables and herbs add flavor and nutrients to slow cooker dishes. Be sure to add them in the right order so that they cook evenly.
  • Cook on low heat: Slow cooker dishes are best cooked on low heat for a long period of time. This allows the flavors to develop and the meat to become tender.

Conclusion:

Slow cooker recipes are a great way to create delicious and easy meals. By following these tips, you can ensure that your slow cooker dishes turn out perfectly every time. So next time you're looking for a hassle-free meal, reach for your slow cooker and let it do the work for you.
