2/3 cup sugar
2/3 cup packed brown sugar
3-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg, room temperature
1 cup 2% milk
1/2 cup orange juice
3 tablespoons canola oil
2 to 3 teaspoons grated orange zest
2 cups coarsely chopped fresh or frozen cranberries
1 large apple, peeled and chopped

Steps:

1/4 cup butter (room temperature)
1 large egg (room temperature)
1 cup orange juice
1 1/2 cups chopped fresh cranberries

Steps:

  • Preheat oven to 350°F (175°C) and grease and flour a 9x5-inch loaf pan.
  • In a medium bowl combine flour, baking powder, baking soda, salt, cinnamon, and orange zest. Set aside.
  • In the bowl of a stand mixer or using a hand mixer, cream together sugars, butter, and egg until smooth. Add orange juice and slowly mix until combined.

3-1/2 cups plus 1 tablespoon all-purpose flour, divided
2 teaspoons salt
1 tablespoon cornmeal or additional flour
1 cup dried cranberries
4 teaspoons grated orange zest

Steps:

  • In a small bowl, dissolve yeast in water. In a large bowl, mix 3-1/2 cups flour and salt. Using a rubber spatula, stir in yeast mixture to form a soft, sticky dough. Do not knead.
