1 large egg
3/4 cup panko breadcrumbs, white or whole wheat
1 teaspoon garlic powder
1 teaspoon dried Italian herbs
1/2 teaspoon kosher salt
2 boneless, skinless chicken breasts, cut into chunks
Nonstick cooking spray
1 cup ketchup
1/3 cup packed dark-brown sugar
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1 teaspoon paprika

  • Beat the egg in a shallow bowl. Place the panko, garlic powder, Italian herbs and salt in a separate shallow bowl and stir to combine.
  • One at a time, dip the chicken chunks in the egg and then in the breadcrumbs. (Keep one hand dry to help adhere the breadcrumbs to the chicken.) Make sure the chicken chunks are completely coated. Place on the prepared baking sheet.
  • Spray each nugget with nonstick spray. Bake until browned and cooked through, 18 to 20 minutes.
  • For the barbecue sauce: In a small saucepan, stir together the ketchup, brown sugar, vinegar, Worcestershire sauce, garlic and paprika. Bring to a boil, stirring frequently. Reduce the heat to low and simmer until thickened, 2 to 3 minutes. Serve with the nuggets.

GLUTEN FREE CHICKEN NUGGETS (EASY)

Gluten Free Chicken Nuggets (Easy) image

I made these today for a daycare and they were a big hit. The taste reminds me of french fries. They were so good I didn't even dip them in anything. So easy to make. Use flavored mayo to mix it up a bit. They dont keep very well as the potato flakes will soak up moisture and become mashed.

1/2 teaspoon kosher salt
3/4 cup panko bread crumbs
1 tablespoon parmesan cheese, grated

Tips:

  • Use boneless, skinless chicken breasts: This will make the nuggets easier to prepare and cook evenly.
  • Cut the chicken into 1-inch pieces: This will ensure that the nuggets are bite-sized and cook quickly.
  • Season the chicken with your favorite spices and herbs: This will add flavor and depth to the nuggets.
  • Make sure the chicken is coated evenly with flour before frying: This will help the nuggets to brown and crisp.
  • Fry the nuggets in hot oil: This will help them to cook quickly and evenly.
  • Drain the nuggets on paper towels before serving: This will help to remove any excess oil.
