Number Of Ingredients 9

1/2 cup (1 stick/115 g) unsalted butter, softened
1/2 cup (100 g/3.5 oz) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup (70 g/2.5 oz) all-purpose flour
1 teaspoon baking powder
1/2 cup almond flour*
25 cherries
powdered sugar (, to sprinkle on top (optional))

Steps:

  • Preheat oven to 325F/160C. Butter an 8x8-inch pan.
  • In a medium bowl sift together all-purpose flour and baking powder. Add almond flour and mix. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat together butter and sugar for about 3 minutes until light and fluffy. Scrape down the sides and the bottom of the bowl as needed. Add the eggs, one at a time, beating well after each addition. Beat in vanilla extract. Don't worry if the batter looks a bit curdled. On low speed, add flour mixture and beat just until combined. Do not overmix.
  • Spread the batter into prepared baking pan and smooth the top. Arrange cherries on top of the batter.
  • Bake for 30-35 minutes until a toothpick inserted into the center of the cake comes out clean. Let the cake cool completely on a wire rack. Sprinkle the top with powdered sugar, if you like.

1 teaspoon almond extract
2 (21 ounce) cans cherry pie filling
1 (15.25 ounce) package yellow cake mix
½ cup cold unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Stir 1/2 teaspoon almond extract into each can of pie filling.
  • Pour both cans of pie filling into the prepared baking dish. Sprinkle cake mix evenly over pie filling. Grate cold butter over top, distributing it as evenly as possible.

200g golden caster sugar

175g self-raising flour
85g ground almonds

300g glacé cherries
100ml milk
2 tbsp flaked almonds

  • Heat oven to 160C/140C fan/gas 3. Line the base and sides of a 20cm deep cake tin. Beat together the butter and sugar until light and fluffy, then beat in the eggs, one by one. Fold in the almond extract, flour, ground almonds and baking powder, followed by the cherries and milk.
  • Scrape into the prepared tin, scatter over the flaked almonds, then bake for 1 hr-1 hr 15 mins. Cool the cake in its tin before serving.

Water, vegetable oil and eggs called for on cake mix box
1 pint (2 cups) whipping cream
1/2 cup powdered sugar
2 to 3 tablespoons brandy, if desired
1 can (21 oz) cherry pie filling
1/2 teaspoon almond extract
2 tablespoons sliced almonds

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease two 8- or 9-inch round cake pans, or spray with baking spray with flour.
  • Make and bake cake as directed on box for 8- or 9-inch rounds. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
  • In medium bowl, beat whipping cream with electric mixer on high speed until slightly thickened. Gradually beat in powdered sugar until stiff peaks form. Fold in brandy. In another small bowl, mix pie filling and almond extract.
  • On serving plate, place 1 cake layer, rounded side down. Spread with half of the whipped cream, then 1 cup cherry mixture to within 1 inch of edge. Top with second layer, rounded side up. Frost top with remaining whipped cream. Spoon remaining cherry mixture over top. Sprinkle with sliced almonds. Store covered in refrigerator.
