4 c shredded cheddar or mexican blend cheese
4 eggs
1 c milk
1 c baking mix (bisquick, pioneer, or other brand)
1 - 4 oz can(s) green chilis drained

Steps:

  • 1. Beat eggs.
  • 2. Mix cheese, milk, baking mix, chilis into beaten eggs.
  • 3. Spray 9x13 baking dish or pan with butter spray. Pour in mixture and bake in pre-heated 350 degree oven for 20-30 minutes or until lightly golden on top and toothpick inserted comes clean. Cut into squares to serve.

This particular recipe came from a B&B in Northern Vermont that we visited in the fall of 2001 when the colors were in full bloom.

4 slice white sandwich bread
1 medium onion, chopped
1 c fresh mushrooms, sliced
2 Tbsp butter,unsalted
1 c cooked ham, chopped
1 c cheddar cheese, shredded
1 c swiss cheese, shredded
1 Tbsp all purpose flour
1 1/4 c milk
6 large eggs, beaten
1 Tbsp dry mustard, i prefer coleman's
1/4 tsp garlic powder with parsley
parsley for garnish

Steps:

  • 1. Place bread slices in the bottom of a lightly greased 8 inch square baking dish; set aside.
  • 2. Saute` onion and mushrooms in butter until tender; spoon evenly over bread. Top with ham.
  • 3. Combine cheeses and flour; sprinkle over ham.
  • 4. Combine milk, eggs, dry mustard and garlic powder; pour over cheese. Cover and chill 8 hours.
  • 5. Remove from refrigerator and let stand for 30 minutes. Bake at 375-degrees for 35 minutes or until set.
  • 6. Let stand for 10 minutes before serving. Garnish with parsley.

8 -10 slices bacon, fried crispy and crumbled
1/2 cup mushroom, sliced
1/2 cup tomatoes, peeled and chopped

Steps:

  • Generously butter 9x13-inch baking dish.
  • Arrange bread cubes in dish and sprinkle with cheese.
  • Beat together next 5 ingredients with pepper to taste and pour evenly over bread and cheese.
