1 1/4 pounds thin asparagus spears, washed and dried
1 lemon, juiced
Extra-virgin olive oil, for drizzling
1/4 pound thinly sliced prosciutto di Parma

Steps:

  • For asparagus, snap off tough ends of spears where they naturally give when bent. Place spears into 1-inch of boiling water. Cover the pan and cook asparagus for 3 or 4 minutes, until spears are just tender but remain bright green in color, about 3 to 4 minutes.
  • Drain and cold shock the spears in a colander under cool water. Return cooked asparagus to skillet and coat with lemon juice and a drizzle of extra-virgin olive oil.
  • Remove bundles of several spears at a time from the pan and wrap with sliced prosciutto. Pile assembled bundles on a serving plate.

16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

1 frozen pie crust
1 tablespoon sesame seeds
3 slices prosciutto
1 tablespoon Smart Balance butter spread (melted)

Steps:

  • Bring a pot of water to boil and blanch the asparagus. Drop into an ice bath to stop cooking.
  • Roll out pie crust to 1/8 inch thickness.
  • Slice the prosciutto into long thin strips.
  • Starting at the top of the spear, wrap a strip of prosciutto around the asparagus, spiraling it down to the base. Do the same with the pie crust strips, overlaying the prosciutto.
  • Lay each spear on a cookie sheet. When each one is wrapped, brush lightly with melted butter and sprinkle with sesame seeds.

1 pound fresh asparagus, trimmed
½ pound thinly sliced prosciutto
1 ½ cups vegetable oil for frying, or more as needed
1 ½ cups beer
1 cup all-purpose flour
1 large egg, beaten
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add asparagus; parboil for about 30 seconds for thin spears and up to 3 minutes for thick spears. Drain and immediately transfer to a bowl of ice water to cool and stop the cooking. Drain again and pat dry.
  • Heat about 2 inches oil in a deep-sided pot over medium-high heat to 350 degrees F (175 degrees C).
  • Lay 2 to 3 slices of prosciutto next to each other, slightly overlapping. Place an asparagus spear on top and roll up in the prosciutto. Repeat until all spears are rolled.
  • Mix beer, flour, egg, salt, and pepper together in a shallow bowl. Dip wrapped spears in the batter and place several at a time in the hot oil. Cook for 2 to 3 minutes, then flip and cook for 2 to 3 minutes on the other side. Remove to a paper towel-lined plate to catch the excess oil. Continue frying the remaining spears.

30 fresh asparagus spears, trimmed to width of ham slices
8 oz pkg cream cheese, room temperature
2 tsp prepared horseradish, to taste
1/2-1 tsp sugar, to taste
1/4 tsp dried dill weed
1 pinch salt and pepper
15 slice good quality prosciutto ham

Steps:

  • 1. Wash and trim asparagus spears - save bottoms for another use if not too woody. Blanch briefly 2 min in boiling salted water and remove stalks to bowl of ice water to stop cooking process and retain crispness/color.
  • 2. Cream together cheese, horseradish, sugar, and spices to your personal taste. (Some like it lighter/sweeter and others like the full-on horseradish flavor!) Blend thoroughly with mixer until creamy.
  • 3. Drain and dry asparagus spears. Spread cream cheese mixture onto prosciutto slices in moderate layer, then place 2 asparagus spears across the width of ham slice. Roll up asparagus in cream cheese mixture to end of ham strip. Keep refrigerated until served. If you are finicky about uniform appearances, you can slice off the bottom of each with a sharp knife after refrigerating a while for exactly flat and matching edges (cook gets to eat the scraps!). These are colorful, quick and easy, and very unusual snacks to serve as many people have never tasted them before. 6 oz cream cheese, room temperature
3 Tbsp chopped green onions
1/2 tsp italian seasoning
6 slice prosciutto cooked and broken up
1 lb asparagus
grated parmesan cheese
1/4 c melted butter

  • 1. Grease baking sheet. Preheat oven to 400. Prepare asparagus spears by breaking off ends where tender pieces begin. Cook in boiling water for 5min. Remove from water and shock & set aside.
  • 2. In a bowl combine cream cheese, green onions, italian seasoning & prosciutto, mix well. If cream cheese is hard to spread, warm a bit in microwave. Flatten bread with rolling pin.
