1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. 1/2 cup vegetable oil or melted coconut oil
2 eggs (room temp if using coconut oil)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.

2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 large egg, beaten
1 cup unsweetened applesauce
1/2 cup butter, melted
crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.

1 teaspoon baking powder
1/2 teaspoon baking soda
