Tips:
- Select the Right Potatoes: Yukon Gold or Russet potatoes are ideal for this recipe, as they hold their shape well and become fluffy when cooked.
- Cut Potatoes Evenly: Ensure uniform potato sizes for even cooking. Cut them into 1-inch cubes for a consistent texture.
- Parboil Potatoes: This step helps remove excess starch, resulting in a creamier texture. Bring water to a boil, add potatoes, and cook for 2-3 minutes. Drain and set aside.
- Melt Butter: Use unsalted butter for better control over the saltiness of the dish. Melt it in a large skillet over medium-low heat.
- Cook Garlic and Onion: Add minced garlic and chopped onion to the melted butter. Sauté until softened and fragrant, about 2-3 minutes.
- Add Potatoes: Pour the parboiled potatoes into the skillet with the butter, garlic, and onion. Stir gently to coat them in the flavorful mixture.
- Season Generously: Sprinkle salt, pepper, and dried thyme over the potatoes. Adjust seasonings to taste.
- Add Cream Cheese: Cut cream cheese into small cubes and distribute them evenly over the potatoes. As they melt, they will create a creamy and flavorful sauce.
- Cover and Cook: Reduce heat to low, cover the skillet, and let the potatoes cook for about 20-25 minutes, stirring occasionally. Ensure they are tender and slightly browned.
