EASY ALMOST FAT FREE CORNBREAD

Easy Almost Fat Free Cornbread image

I wanted cornbread for dinner and was having a hard time finding a good low fat recipe. Many included corn kernels and my family won't eat that in cornbread! I came across this one in a Weight Watchers cookbook, though this recipe was listed in order for you to make it to use in cornbread stuffing. Therefore I was worried that it would not be good to eat on its own. But it was tasty! And it does not have the funny consistency that some fat free baked goods do. It makes 12 servings and each serving is only 2 WW points!

This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

Moosewood Restaurant Almost Fat-Free Cornbread image

We are trying to cook healthier this year. This cornbread uses cooked pumpkin, squash or sweet potato puree. A 4 oz. or 41/2 oz. jar of baby food (check to make sure it is just puree) works well in this recipe. This gives the cornbread a deep golden color.

Time 45m

Yield 8 serving(s)

Number Of Ingredients 8

2 tablespoons brown sugar
2 egg whites
3/4 cup nonfat yogurt or 3/4 cup buttermilk
1/2 cup sweet potatoes or 1/2 cup winter squash
1 cup cornmeal
1 cup unbleached white flour
1/2 teaspoon salt
1 tablespoon baking powder

Steps:

  • Preheat oven to 350°F
  • Prepare an 8 inch square baking pan with cooking spray.
  • In a large bowl, beat the brown sugar, egg white, yogurt or buttermilk, and pumpkin until frothy.
  • Sift the cornmeal, flour, salt and baking powder into the mixing bowl.
  • Gently fold the dry ingredients into the wet ingredients until just mixed.
  • Pour the batter into the oiled pan and bake, uncovered for 20 to 25 minutes.

Tips:

  • Use fresh cornmeal. Fresh cornmeal will give your cornbread a more flavorful and moist texture. It is possible to use stone-ground cornmeal, but you may need to adjust the amount of liquid in the recipe.
  • Don't overmix the batter. Overmixing the batter will make your cornbread tough. Mix just until the ingredients are combined.
  • Use a hot oven. A hot oven will help your cornbread rise and brown properly. Preheat your oven to the temperature specified in the recipe before you start mixing the batter.
  • Bake the cornbread in a well-seasoned pan. A well-seasoned pan will help prevent the cornbread from sticking. You can season your pan by rubbing it with oil before each use.
  • Let the cornbread cool slightly before serving. This will help the cornbread hold its shape.
  • Serve the cornbread warm with butter, honey, or your favorite toppings. Cornbread is a delicious side dish for many meals and also enjoyable on its own.

Conclusion:

Easy Almost Fat-Free Cornbread is a delicious and healthy side dish that is perfect for any occasion! With a slightly sweet and moist texture, this cornbread is sure to be a hit with everyone at the table. This cornbread is also very easy to make. Simply combine the ingredients in a bowl, pour the batter into a greased baking dish, and bake until golden brown!
