3 tablespoons butter
4 cups crispy chow mein noodles

  • Cook and stir marshmallows, peanut butter, and butter in a saucepan over medium heat until the marshmallows melt completely into the mixture, about 5 minutes.
  • Put chow mein noodles into a large bowl. Pour marshmallow mixture over the chow mein noodles; stir to coat.

These are so pretty as an Easter treat. I've seen these topped with "Peeps" as well. They're a fun, but messy project but who doesn't mind licking chocolate off of their fingers??? Choose your favorite flavor of Jelly Bellys to decorate them with and then drop a few Jelly Bellys on the serving place as garnish. The original recipe is from my grandmother - adapted to make Easter Egg Nests.

1 (12 ounce) package chow mein noodles
3 cups semi-sweet chocolate chips
1 tablespoon vegetable oil
8 ounces jelly, bellys

Steps:

  • Melt chocolate with oil.
  • Pour over chow mein noodles and mix well.
  • With a large cookie scoop drop onto a wax paper lined cookie sheet and make a depression to shape into 2 1/2" to 3" nests.
  • Let cool until chocolate it's firm.

Steps:

  • In a small bowl, mix food coloring with milk; add coconut and mix until evenly tinted; set aside.

1 (15.25 ounce) package chocolate cake mix
1 ¼ cups water
½ cup vegetable oil
3 eggs
1 (10 ounce) package sweetened flaked coconut
1 (16 ounce) can prepared chocolate frosting
1 cup egg-shaped chocolate candies (such as peanut M&Ms®), or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 cupcake cups with paper liners.
  • Beat cake mix, water, vegetable oil, and eggs in a mixing bowl using an electric mixer, on low speed until mixture is moistened, 30 seconds. Increase speed to medium and beat until batter is smooth, 2 more minutes. Fill prepared cupcake cups about 2/3 full with batter.
  • Bake cupcakes in the preheated oven until a toothpick inserted into a cupcake comes out clean, 18 to 23 minutes. Remove cupcakes from oven and turn oven heat up to 400 degrees F (205 degrees C). Let cupcakes cool.
  • Spread coconut into a large, shallow baking pan or onto a baking sheet; toast in the hot oven until coconut is golden brown, about 7 minutes. Cool.
  • Cut a piece out of the top of each cupcake to leave a hollow depression about 1/2 inch deep and 1 1/2 inches across. Discard cut-out portions. 1 tsp vanilla extract
1/2 tsp cream of tartar
1 c sugar

candy eggs (jelly beans, chocolate, egg shaped malted milk balls) or a hand decorated egg

Steps:

  • 1. Preheat the oven to 250 degrees. Line two baking sheets with parchment paper (available at most grocery stores). In a mixing bowl, whip together the egg whites, cream of tartar and salt until soft peaks form.
  • 2. Then, slowly add the sugar, beating constantly until the mixture is glossy and stiff (another minute or so). Beat in the vanilla extract until just combined.
  • 3. Now you're ready to make the meringue nests. Spoon three mounds of the mixture onto each baking sheet. Use the bowl of the spoon to shape each mound into a 4-inch-wide circle with a 2-inch-deep depression in the center. Give your nests a lived-in look by sprinkling shredded coconut over each one.
  • 4. Bake for 1 hour and 15 minutes, or until the meringues are dry and the coconut has turned golden brown. Once cool, tuck one malted candy egg or jelly bean into the nest for each child in the family. Makes 6 nests.

11 ounces , butterscotch or 11 ounces semi-sweet chocolate chips
3 -4 cups of fiber one all-bran cereal
1/4 teaspoon canola oil
1 bag of mini robin eggs, jelly beans or 1 bag even peanuts

Steps:

  • Cover a cookie sheet with waxed paper. Melt butterscotch or chocolate chips and oil in a double boiler, saucepan or in the microwave. Stir until smooth. Remove from heat. With a spatula stir in cereal until coated. Drop by spoonfuls of the mixture onto the waxed paper to make a tiny haystack. Top with robin eggs. Refrigerate for 15 minutes. Just my take on a favorite recipe!! There are so many out there but this is the way I like to make them!! When I made this today I yielded 6 large muffin tins, 6 small, and two left over "hand formed" nests. ;) Total of 14 assorted sizes - depends on your pans what you will yield. Cook time is chill time.

2 cups chocolate chips
2 tablespoons creamy peanut butter
4 cups chow mein noodles
cooking spray

Steps:

  • Heat water in double boiler over medium heat and add chocolate chips to top portion.
  • When chocolate begins to melt, add peanut butter and continue to stir until creamy.
  • Add broken chow mein noodles, stirring until completely coated.
  • Remove from heat and place upper portion on a folded towel to allow cooling while you prepare tins.
  • Spray muffin tins (I liked the large size best, but make both for varied sizes) with cooking spray (such as Pam).
  • Spoon generous amount of mixture into each cup creating a well in the center as you go.
  • Continue until all of mixture is used up.
  • Place jelly beans, M&M's Peeps or other candies for garnish as desired.
  • Chill in refridgerator for at least 1 hour or until chocolate has hardened.
  • Remove from tins and serve or package to gift - should be used within a couple of days.

BRING TO BOIL AND REMOVE FROM HEAT:
1 c light Karo syrup
1 c sugar
ADD:
1 1/2 c peanut butter
1 c chocolate chips
4 c Rice Krispies
coconut, jelly beans, marshmallow chicks
green food coloring

Steps:

  • 1. Bring to boil: 1 cup light Karo syrup and 1 cup sugar.
  • 2. Remove from heat and add 1 1/2 cup of peanut butter, 1 cup chocolate chips and 4 cups of Rice Krispies, mixing well.
  • 3. Shape about 1/2 cup of the mixture into a nest by making a ball and then pressing in the center to make depression for nest. Set on waxed paper.
  • 4. Fill with coconut that has been tinted with green food coloring and a little water and air dried first. Note: Make sure the coconut has been dried enough and won't rub off on hands when touched.
  • 5. Fill with jelly beans, chocolate eggs or other egg shaped candies and top off with a marshmallow Peep if desired. Have A Blessed and Happy Easter!!! :)

I got this recipe from a childrens cookbook. Original recipe called for peanutbutter chips, but we just love butterscotch. If anybody has peanut allergies you can leave out nuts. The salt or seasalt is a must for these sweet and salty treats.

1/2 tsp salt
1 c peanuts
2 c chowmein noodle
mini cadberry eggs

  • 1. Combine oil, salt and butterscoth in microwave bowl. Microwave on 30 min interval til melted.
  • 2. Combine nuts and chowmien noodles in bowl. Pour butterscoth over noodle nut mixture and combine. Form into 2inch nests. Spray hand with cooking spray so doesnt stick. Place on waxed paper. Allow to cool for 10 minutes.
  • 3. Add eggs to top. Store in container.

1 bag butterscotch chips

2 c mini marshmallows
4 c chow mein noodles
1/4 c butter plus extra to coat muffin tin and fingers.
jelly beans, m & ms, robin's eggs, or other small egg shaped candy.

Steps:

  • 1. Lightly butter a 12 cup muffin tin.
  • 2. In a sauce pan, combine the marshmallow and 1/4 c.butter over medium heat. Cook, stirring often, until the butter and marshmallows are melted.
  • 3. Add the chow mein noodles stirring to coat well.
  • 4. Butter your fingers and press the mixture into the bottom and up the side of the muffin tin cups to form a nest shape.
  • 5. Refrigerate until firm. Remove from muffin tin and fill each with jelly beans or other egg shaped candies.

Tips:

  • To make the nests, you will need a muffin tin and some cupcake liners. If you don't have a muffin tin, you can also use a baking sheet.
  • To melt the chocolate, you can either use a microwave or a double boiler. If you are using a microwave, heat the chocolate in 30-second intervals, stirring in between, until it is melted.
  • If you don't have any shredded coconut, you can use finely chopped almonds or walnuts instead.
