I made this a few years ago, the very first time I made homemade fried chicken, and realized, hey, I can cook! :) But, this really is a super, super easy recipe that tastes like you worked really hard making it! ;) And yes, the batter rises to the top of the peaches!

1/2 cup unsalted butter, melted
1 cup flour
2 cups sugar
3 teaspoons baking powder
1 pinch salt
1 cup milk
4 cups peeled pitted thinly sliced fresh peaches
1 tablespoon lemon juice
3 -5 dashes cinnamon, to taste

Steps:

  • Preheat oven to 375* F.
  • Pour melted butter in a 13x9x2 baking dish.
  • In a medium bowl, combine flour, 1 c sugar, baking powder and salt and mix well.
  • Stir in milk, mixing until just combined.
  • Pour batter over butter in pan but do not stir.
  • In small saucepan, combine peaches, lemon juice, and remaining cup of sugar and bring to boil over high heat, stirring constantly.

1 (29 ounce) can sliced peaches with juice
1 cup self-rising flour
1 cup white sugar
1 pinch salt

It is so versatile making it easy for you to use whatever kind of fruit you like (no, it doesn't have to be peaches, I just like them!) My husband, however does not like peaches, so we use pineapple sometimes, or cherries! It always turns out...

1 stick butter or oleo
1 c sugar
1 c pioneer biscuit mix
1 can(s) large can of fruit (i use peaches!)

Steps:

  • 1. Preheat oven to 325 degrees. Melt butter in an 8"x8" Pyrex pan.
  • 2. Add biscuit mix, sugar and fruit to the butter. You can mix it together at this point, or not. Sprinkle some lemon juice, cinnamon and a pinch of salt over the top.
  • 3. Bake at 325 degrees about an hour until bubbly and brown. Double recipe for a long Pyrex dish.
