1 pound ground beef
1 large onion, chopped
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 celery rib, diced
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
Optional: Shredded cheddar cheese, sour cream, and green onions

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until flavors are blended, about 30 minutes. Top with shredded cheese, sour cream, and green onions, if desired.

Mexican food is one of my favorites! Chili Rellenos are difficult to make, so I came up with this cheater way of making them to get all the flavor, but half the hassle.

2 anaheim chilis (you can also use whole canned chilis)
2 c cheese, shredded
5 eggs
1/2 c milk
1 pinch salt
1 pinch pepper

Steps:

  • 1. Cut chilis in half, remove seeds and place in a greased 8x8 pan. I used my Misto sprayer filled with organic olive oil to grease my pan.
  • 2. Cover chilis with grated cheese. I used pre-shredded mexican blend.
  • 3. Whisk together eggs, milk, salt and pepper and pour over chilis and cheese.
  • 4. Bake at 350 degrees for 30 minutes.
  • 5. Serve with warm corn tortillas and fresh homemade pico de gallo.

1 large onion, chopped
2 cloves garlic, minced, or more to taste

1 cup water
1 (4 ounce) can chopped green chile peppers
2 tablespoons mild chili powder

  • Heat oil in a large skillet over medium-low heat. Add onion and garlic; cook and stir until onion is translucent, about 5 minutes. Add ground beef; cook and stir until browned, 8 to 10 minutes.

2 medium white onions, chopped
2 green peppers, chopped
1 (16 ounce) can chicken broth
2 (16 ounce) cans chili beans (undrained)

2 tablespoons chili powder (or to your taste)
2 teaspoons salt
1 teaspoon black pepper
crushed red pepper flakes (as much as you desire)

Steps:

  • Saute onions and peppers in a large pot with a little olive oil until tender then remove. Brown hambrger in same pot until done. Remove most of the grease. Add the onions and peppers along with the rest of the ingrdients to the pot. Stir well to disolve the refried beans. Cover and let simmer for an hour stirring every 10 minutes or so. Remove cover and simmer until desired thickness is obtained. Ladle into bowls and enjoy.
