CHEESE SOUP

Provided by Alton Brown

Time 1h5m

Yield about 1 1/2 quarts (about 4 servings)

Number Of Ingredients 15

2 tablespoons unsalted butter
5 ounces small diced onion (approximately 1 cup)
5 ounces small diced carrot (approximately 1 cup)
5 ounces small diced celery (approximately 1 cup)
1/2 teaspoon salt for sweating vegetables, plus more if needed at end of cooking
3 tablespoons all-purpose flour
1 quart chicken broth, heated to a simmer
1 tablespoon minced garlic
1 bay leaf
1 cup heavy cream
10 ounces Fontina, shredded
1 teaspoon Marsala wine
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1/2 teaspoon white pepper

Steps:

  • Melt butter in large heavy-bottomed soup pot over medium heat. Add onion, carrot, celery, and salt. Sweat for 5 to 10 minutes or until the vegetables begin to soften, stirring occasionally. Sift the flour over the vegetables and cook, stirring constantly, for 2 to 3 minutes.
  • Gradually add the chicken stock and bring to boil, stirring constantly. Reduce heat to low and add the garlic and bay leaf. Cover and simmer for 30 minutes or until vegetables are soft.
  • Remove bay leaf. Turn off the heat, add the heavy cream, and then puree with an immersion blender or in a conventional blender*. Gradually add the cheese, 1 small handful at a time, and stir until melted before adding next handful. Stir in the Marsala, Worcestershire sauce, hot sauce, and white pepper. Taste and add additional salt if desired. If soup is not hot enough, return to a low heat until warmed through.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 13

1/4 cup butter
1/2 cup onion, diced
1/2 cup celery, diced
1/2 cup carrot, diced
1 1/2 tablespoons cornstarch
4 cups chicken broth (room temp.)
4 cups milk (room temp.)
1/8 teaspoon baking soda
1 lb Velveeta cheese, cubed
1 teaspoon salt & pepper
1/8 teaspoon cayenne pepper
1 tablespoon dried parsley
1/2 teaspoon paprika

Steps:

  • Melt butter in heavy saucepan. Saute' vegetables until tender.
  • Stir in flour and cornstarch. Cook until bubbly.
  • Add stock and milk gradually;
  • blending into smooth sauce.
  • Add soda and cheese cubes; stir until
  • thickened.
  • Season with salt & pepper; add parsley.
  • Before serving, heat thoroughly in double boiler. DO NOT LET BOIL.
  • Garnish with paprika.
  • Serve and enjoy!

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are great choices for this soup. They hold their shape well and have a smooth, creamy texture.
  • Use a good quality cheese: The type of cheese you use will greatly affect the flavor of the soup. Use a sharp cheddar cheese for a bold flavor, or a mild cheddar cheese for a more subtle flavor.
  • Don't overcook the vegetables: The vegetables should be cooked until they are tender, but not mushy. Overcooked vegetables will make the soup bland and watery.
  • Use a good quality chicken broth: Chicken broth is the base of the soup, so it's important to use a good quality broth. If you don't have any homemade chicken broth on hand, you can use a low-sodium store-bought broth.
  • Season the soup to taste: Once the soup is finished cooking, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder.
  • Serve the soup hot: Duchess cheese soup is best served hot. You can garnish it with a sprinkle of chopped parsley or chives.

Conclusion:

Duchess cheese soup is a delicious and comforting soup that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. With its creamy texture and sharp cheddar flavor, this soup is sure to be a hit with your family and friends.
