1 sweet onion (such as Vidalia®), coarsely chopped
4 ribs celery, leaves included, coarsely chopped
2 carrots, coarsely chopped
3 large cloves garlic
1 teaspoon whole black peppercorns
3 bay leaves
water to cover

Steps:

  • Place brisket fat-side up in a large stockpot, along with spice packet and any juices remaining in packaging. Add beer, onion, celery, carrots, garlic, peppercorns, bay leaves, and water to cover; bring to a low boil over medium-low heat. Cover and simmer for 3 1/2 hours. Remove from heat; and let meat rest in cooking liquid, about 20 minutes more.
  • Transfer brisket to platter; cut into thin slices across the grain.

Last time I made this was for a very elegant "After-Rehearsal Dinner" for one of my favorite couples. It was hit of course. I served with "Garlic Mashed Chive Potatoes" and fresh steamed green beans. Of course we had a great salad and wonderful desserts to follow.

2 c bourbon
1 clove garlic
2 Tbsp fresh lemon juice
1 Tbsp sugar
1 tsp kosher salt
3 whole cloves
1 tsp coleman's dry mustard
1/2 tsp ground ginger
2 Tbsp worcestershire sauce
4 Tbsp orange marmalade
1 3-4 lb center-cut beef tenderloin, trimmed
1 1/4 c olive oil, extra virgin
freshly ground black pepper

Steps:

  • 1. Combine, bourbon, garlic, lemon juice, sugar, salt, cloves, dry mustard, Worcestershire sauce, and marmalade in a saucepan; heat until hot, stirring until well blended. Do NOT boil. Remove marinade from heat and cool completely.
  • 2. Place the beef tenderloin in a zip-top bag and add cooled marinade. Close bag and let marinate in the refrigerator 18-24 hours.
  • 3. Preheat oven to 425-degrees. Heat olive oil in skillet. Remove tenderloin from marinade and rub with freshly ground black pepper.
  • 4. Brown beef on all sides in the oil. Remove from skillet and place on a well-oiled rack in a roasting pan. Pour 1/2 cup marinade over the beef.
  • 5. Roast until meat thermometer registers 125-degrees for rare or 140-degrees for medium. (total time about 25-30 minutes, so watch your thermometer) Let stand at least 10 minutes before slicing.

Dice in the wok under medium heat until soft with 1 tablespoon of canola oil. 5. Add bean sprouts and sauteed for 2 minutes. 6. Save the veggies in a separate bowl. 7. Put cut rice noodles in a pot of boiling water until they separate. Strain them. 8. Mix chicken broth, five spice powder, oyster sauce, corn starch and Sriracha. Stir well. 9. In a hot wok, add the gravy mixture, then the cooked noodles, beef and veggies.

1/2 - 1 cups Cabernet Sauvignon or similar rich red wine
1/2 - 3/4 cups Jack Daniels or similar Kentucky Bourbon

1 tablespoon Dark chocolate pieces or chocolate syrup
2 cups Onion chopped (separated)
5-6 Potatoes (Russet or Yukon)
1/3 pound Green Beans (cut to thirds)
3 Carrot - peeled and sliced
2 sprigs Parsley - Fresh (garnish only)

Steps:

  • 1. Heat oil in heavy large pot over medium-high heat. Dredge cubed beef in flour and sauté until brown on all sides, about 5 minutes.
  • 2. Add garlic and sauté 1 minute.
  • Add beef stock, ½ of the onions, carrots, tomato paste, allspice, thyme, Worcestershire sauce and bay leaves. Stir to combine.
  • 3. Bring mixture to boil. Reduce heat to medium-low, then cover and simmer 1 hour, stirring occasionally.
  • 4. Add coffee, chocolate, whiskey and wine, potatoes, and balance of onions. Simmer about 40 minutes uncovered until gravy thickens to the point it clings to a spoon. Adjust seasonings to taste. Should be a complex slightly sweet beef gravy.
  • 5. Add beans cut to about thirds. Simmer uncovered until vegetables and beef are very tender, about 40 minutes.
